    Choosing a vegan lifestyle is becoming more appealing every day with so many different reasons behind the decision to stop eating meat and any product that comes from animals.     Many people believe that vegans are not as healthy as the rest of the population due to not receiving the nutrients their bodies need to stay healthy. This is far from the truth.

    Today, you can find scientific information regarding the healthy benefits of eating such things as vegetables, whole grains, fruits, nuts, and legumes while avoiding meat and high fat animal products will actually lower blood pressure, lower blood cholesterol levels, as well as offer less diabetes, strokes, heart disease, cancer, and less obesity.

    Vegans may not eat meat but they enjoy dry beans, lentils, and tofu as substitutes. Tofu known as soy bean curd has been identified to slow down the growth the tumors, lower cholesterol levels, decrease the risk of blood clots, and reduces bone loss which helps with lowering the risk of stroke, heart disease, osteoporosis, and cancer.

    In 1997, the World Cancer Research Fund published a report with suggestions to lower the risk of cancer. In this report it was recommended to have diets that were plant based which included such foods as legumes, fruits, and vegetables.

    Chapter 1 – Egg-Like Dishes

    No Eggs Eggs Benedict

    Ingredients

    7 ounces baby spinach

    1 teaspoon olive oil

    4 slices of tofu

    2 English muffins (prepared)

    2 servings of faux meat (prepared)

    2 teaspoons white vinegar

    1½ tablespoon vegan mayo

    1 tablespoon vegan butter

    ½ tablespoon soy sauce

    ¼ cup soy milk

    1/8 cup yeast

    ¼ teaspoon paprika

    ¼ teaspoon turmeric

    ¼ teaspoon lemon juice

    ¼ apple cider vinegar

    Sea salt and black pepper to taste

    Preparation

    Place spinach in a small pan and sauté in the olive oil. Set aside Next, fry the tofu in the same pan with the left over olive oil and add the soy sauce. While frying the tofu, preheat the oven to 300 degrees Fahrenheit.

    Place all of the other ingredients in a sauce pan and heat on the stove to create the Hollandaise sauce.

    Now, just layer by starting with ½ of the prepared English muffin, next the spinach, then the faux meat, and last the tofu, top with the other half of the English muffin. Place in the oven for around 7 minutes. Take out of the oven and place on plate. Pour the sauce over the creation.  Makes 2
