Food Bank Number 6
To show some holiday spirit at my work the company decided to do a food drive. The
goal was to donate a total of 7,000 pounds of food by Thanksgiving, however the deadline was
moved the following Monday because the food bank was unable to pick up the donations until
then. The company was divided into 33 teams with relatively the same number of people. The
prizes for the top three teams were: third place got one hour of PTO per person, second place got
two hours of PTO per person, while firsts place the team would get to spend part of the day with
the CEO and COO.
The first week there was little added to each teams boxes and for the most part it seemed
like we were not going to be able to reach our goal. Then one individual on my team, who
happens to be very competitive, decided that he was going to go and get 100 pounds of food one
weekend. This then created much competition where more and more teams were donating more
food. In the end when the Utah Food Bank came to pick up the donations and weigh it we had
excided our goal. The final count was over 51,000 pounds of food with the winning team getting
to spend an afternoon at a soup kitchen helping feed the hungry.

I wanted to learn more about traditional Guatemalan dishes because every time I had seen
one it looked so good. I asked a friend of mine, Mike DeLeon, if he could give me some more
insight on the dishes. We were both hired on at the same time where I work and we became
friends a few months later. Mike and his family are from Guatemala, so he was the perfect
person to ask about some of the different traditional Guatemalan food.
Fiambre is a traditional Guatemalan dish that happens to be prepared once a year to
celebrate Dia de los Santos also known as All Saints day. This celebration is the day before Dia
de los Muertos also known as the day of the dead and the dish is traditionally shared with the
friends and family. Not every dish is the same because every family has their own recipe that has
been passed down from generation to generation. There are usually three different types; white,
red usually with beats, and divoriciado where the ingredients are left separated so each person
can chose what they want. This dish is generally prepared the day before it is served so it can
marinate in a blend of vinegar. It is a salad like dish prepared with more than 50 ingredients that
vary depending on the family.
Pepin is a traditional meaty, spicy stew that is one of the oldest Guatemalan dishes. It
was created out of the mix of Spanish and Mayan cultures and it so happens to be one of the
most famous Guatemalan stews. This national dish can be found in most traditional restaurants
and it is a dense stew that can be served with rice. Bocado de Reina is a Guatemalan cake that is
made out of leftover bread that is similar to bread pudding with the consistency of cake. This
recipe shows how Guatemalans take the way that the recycle into food by using the leftover
bread and the name roughly translated to Bite of a Queen.
I gained a lot of insight into traditional Guatemalan foods from my friend Mike. I see
how many of the dishes are created with tradition and family in mind. The tradition is so
ingrained that may families have their own recipe or version of each dish. I feel like more
cultures should think about ingraining more family and even thinking about how to create less
waste into some of the dishes that they create. It also got me thinking about my culture and if
there was any traditional food in my life and it made me really look into how I really dont have
anything like that in my life.

I wanted to experience what it felt like when people treat you differently when you have a
disability. I wanted to know what it was like not being able use my legs and how people would
treat me out in public. I had borrowed a wheelchair from one of my dads friends who had it
from when he got injured. I decided to go to Walmart for about three hours with my dad and step
mom while they were shopping for Christmas.
When we were in the store it was really difficult to get around especially when it was
during the busiest hours. Most of the time I was treated like I wasnt even there with people
constantly getting in my way or trying to rush around me. Some would even give me dirty looks
like why would I be here getting in their way. I really felt like I was a hindrance to the people I
was around and my dad and step mom, they knew what I was doing but they were even effected.
Most of the time I was wheeling myself around trying to just get though the aisle, but when it got
really congested thats when my dad had to step in. Usually about that time he would start to get
frustrated that I had to get him involved and he started to be harsher and rude. I felt that people
generally treated me differently by just trying to avoid me when I was simulating having a
disability then when without.
I learned that most people only care about themselves and dont want to be bothered by
those around them. Not very many people talked to me, in fact I really only noticed dirty looks
from those around me. This experience really showed me that I need to start thinking about how
I behave around those around me, and not just those who have a disability but everyone around
me.

It had been a while for me to exercise but I knew what I was getting myself into. It was difficult
at first to get the motivation to do it three times a day but after the first little bit I started enjoying
working out and then I looked forward to it. I felt like it improved my motivation for other
activities as well, I wanted to do my best at everything I did at home and at work. Once I was
more motivated I started to get things done with less procrastination and I started to feel a lot less
stressed.
Physically I was a lot more active and I could tell that I was using my energy efficiently. I also
started to notice that I was losing weight, which made it so I was more comfortable with my

appearance, but that can also be contributed to the healthy eating. Mentally I started to have
better self-esteem because I felt like I looked better to those around me. Due to a higher selfesteem I started to improve at work and I have been able to be more open with people and Im
not as afraid of what others think of me because I know that it is how I feel about myself that
matters.
