Haluski (pronounced halushki)

Ingredients:
1 small head of cabbage, quartered on core (so each qtr stays
together)
1.25 lb thin sliced meaty bacon, cut in small pieces
3 Julienned medium-large sweet onions
Garlic salt
5 cloves fresh Garlic, minced fine or pressed
Black pepper (fresh cracked, coarse)
1/3 cup Olive oil
5 tbspns softened butter
Curly egg noodles 12 oz pkg
Romano and/or Asiago cheese, fresh shredded

Method:

1. Boil the cabbage qtrs for 1 to 2 min till somewhat tender but not
mushy. It cooks more later so better to err on the less cooked side.
(This step is optional but cuts down on cooking time later.)
2. Remove cabbage to colander to rinse, drain and cool.
3. Meanwhile cut bacon in small pieces and cook until crispy, drain.
4. Add ¼ cup olive oil to the still-boiling water and cook egg noodles a bit
short of al dente, drain & rinse quickly in cool water, and toss with a bit
of olive oil, cover and set aside.
5. Meanwhile in a large 13x16 heavy roaster pan over medium-high heat,
sauté the onions, seasoned with garlic salt and black pepper, in 3
Tbspns of the butter, - cook till lightly browned, toss/mix regularly.
6. Slice cooked cabbage and add it to browned onions, turn down the
heat to medium or a bit lower and add the minced garlic.
7. Add another Tbspn butter and garlic salt and black pepper and mix.
8. Weight down with 9x12 pan (with a brick or other weight in it) – must
leave space around the edges for steam to escape.
9. Cook till cabbage turns brown to your liking (mebbe 30 minutes or so).
May need to add bit of water. Stir from time to time.
10. Crumble bacon into the mix.
11. Add cooked egg noodles and 1 Tbspn butter (and maybe more garlic
salt and pepper to taste) and toss till well mixed.
12. Serve topped with romano and/or asiago cheese.
