Crispy Tofu
1-14 oz. package extra-rm tofu, pressed for 30 minutes (you can use a tofu press)
1 tbsp. vegetable or peanut oil
Ginger Peanut Sauce
6 tbsp. creamy peanut buEer
2 tbsp. rice vinegar
1 tbsp. soy sauce
2-3 tsp. light brown sugar (to taste)
1 tbsp. ginger juice (see note)
cayenne to taste (op1onal)
1 tbsp. lite coconut milk or water
Sandwiches
1 small carrot, peeled and shredded
1 small sweet red pepper, sliced
1/4 c. sliced green onion
2 tbsp. chopped cilantro
4 sandwich wraps, pitas, tor1llas, or naan (if you don't eat dairy, make sure the naan is vegan if you use it!)

Instruc1ons
Crispy Tofu
Cut tofu crosswise into 8 slices; cut each slice into two triangles. Heat oil in a large skillet over medium high eat. Carefully place tofu
in skillet (the oil may spaEer a liEle!); cook about 5 minutes on each side, un1l golden and crispy. Transfer tofu to plate lined with
paper towels to absorb any extra oil.
Ginger Peanut Sauce
Whisk together all ingredients. Add addi1onal coconut milk or water, one tablespoon at a 1me, to thin sauce if necessary. (Some
peanut buEers are thicker than others, so the amount you need depends on the type of peanut buEer you use.)
Sandwiches
Heat sandwich wraps, tor1llas, pitas, or naan according to package instruc1ons--you want them to be pliable so they can be folded
over without breaking. Top each with 4 pieces of tofu, shredded carrot, red pepper, green onion, cilantro, and peanut sauce and fold.
Serve with lime wedges, if using.

Vegan, G-Free BBQ Sauce


1/2 cup ketchup
3 Tbsp. Earth Balance
2 Tbsp. fresh squeezed lemon juice
1 Tbsp. chili powder
1 tsp. salt
1 tsp. dry mustard
1 tsp. paprika
1/2 tsp. freshly ground black pepper
2 Tbsp
4 Tbsp. dis1lled vinegar
4 Tbsp. water
3 Tbsp. brown sugar
Combine all of the ingredients in a small sauce pan and
heat over medium-low heat,s1rring occasional, for 20-25
minutes.

Vegan G-Free BBQ Cauliower


2 cups ground cauliower orets from 1 small head of cauliower
3/4 cup almond meal/our
3 Tbsp. golden ax seeds, ground
1/2 cup plus 1 Tbsp. water
1/3 cup vegan, g-free BBQ sauce from above, or your favorite sauce
pinch of salt
Preheat the oven to 450F and line a baking sheets with parchment
paper. Lightly rub olive oil on the parchment paper to prevent s1cking
and set aside.
Combine the ground ax seed and water and set aside for 4-5 minutes.
Chop cauliower into orets and pulse in the food processor un1l the
cauliower looks like couscous or small grains of rice. Do not over
process!
In a large bowl combine all of the ingredients and mix well to combine;
the mixture will be wet. Pour the mixture onto the prepared baking
sheet and spread it out evenly over the surface. Bake in the oven for
20-25 minutes un1l cooked through. Then remove from the oven and
place on a wire rack to cool.

Assemble:
1-2 large white onions, caramelized
4 G-free hamburger buns, toasted
G-free BBQ Sauce
Pile toasted g-free buns high with the cauliower BBQ strips, ladle
piping hot BBQ sauce over the top, and stack caramelized onions on
top. My only other sugges1on would be to grab a napkin!

Po Boy
Makes one sandwich
INGREDIENTS
Baked Oyster Mushrooms
4 ounces oyster mushrooms, cleaned and separated (slice the bigger
mushrooms)
1 teaspoon extra-virgin olive oil
Freshly squeezed juice from 1/2 small lemon
Pinch of sea salt
2 tablespoons water
1 tablespoon ground ax meal
1/2 cup panko breadcrumbs
1 tablespoon nutri1onal yeast
1 teaspoon smoked sweet paprika
1/4 teaspoon onion powder

Instruc1ons:
Combine the olive oil, lemon juice and a generous
pinch of salt in a mixing bowl. Add the mushrooms
and toss, leave to marinate for about 30 minutes.
Preheat the oven to 425 degrees. Line a baking
sheet with parchment paper. Mix together the
water and ax meal in a small bowl and let stand
for a few minutes un1l the mixture becomes slimy
and somewhat s1cky. In a separate plate or pan,
combine the breadcrumbs, spices and salt to taste.
Dip a mushroom piece into the ax seed wash and
then into the breadcrumbs, covering well. Place on
the baking sheet in a single layer. Bake for 10
minutes, ip over the mushrooms and bake
another 5 minutes on the other side un1l crispy.


Sandwich Assembly
1 garlic clove
Vegan mayonnaise
1 soo-crusted loaf of bread

To make the aioli, mince and mash the garlic to a paste. Mix in the mayonnaise.
Slice the bread along one side, leaving the other side hinged. Spread the aioli on each side. Pile the leEuce on the boEom
and top with the mushrooms.
Serve immediately.
