Introduction

1.1 Problem statement


Lemongrass had been used in many Malay dish. Lemongrass is widely used in Malay cooking . Lemongrass is the main ingredient in this menu. Today, lemongrass planted on a large scale and spread marketed. Lemongrass are sold in supermarkets or markets. Lemongrass sold in supermarkets or markets usually has been clean and ready to used. This facilitate the costumers but it often sold in a withered, dried or already rotten. The seller cannot issue new stock to avoid waste. The customers didnt get the high quality of lemongrass. The nutrient of lemongrass may also be reduced. Production of lemongrass powder provides many benefits to customers. This product will focus on whether the lemongrass powder scent similar to lemongrass and has a similar nutrient content of natural lemongrass.

Objective
To produce a new product which is lemongrass powder. To determine the best method to produce the best lemongrass powder. To study whether the uses of winter melon help to increase the solid content of lemongrass powder.

1.3

Hypothesis
Different method of processing process produce different quality of lemongrass powder. Winter melon help to increase the solid content of product. One of the method used will produce lemongrass powder that have original taste of lemongrass.

This study involves the determination of an effective production process to produce a lemongrass powder. Two ways is use which is hot and cold

extraction. Type of lemongrass used can not be identified because it were obtained from open source. Method used is the drying method using a drum dryer. Physical properties of lemongrass powder to be tested is the fineness of the powder. It was tested by the screen test. Whereas, organoleptic characteristics to be evaluated is it flavour, moisture, wet ability and rehydration. Besides that, the use of winter melon to enhance the solid content was also studied.

Lemongrass herb has numerous health benefiting essential oils, chemicals, minerals and vitamins that are known to have anti-oxidant and disease preventing properties.

The primary chemical component in lemongrass herb is citral or lemonal, an aldehyde responsible for its unique lemon odor. Citral also has strong anti-microbial, and anti-fungal properties.

In addition, its herb parts contain other constituents of the essential oils such as myrcene, citronellol, methyl heptenone, dipentene, geraniol, limonene, geranyl acetate, nerol etc. These compounds are known to have counter-irritant, rubefacient, insecticidal, anti-fungal and anti-septic properties.

The herb is very low in calories; contains 99 calories per 100 g but contains no cholesterol.

Its leaves and stems are very good in folic acid (100 g leaves and stems provide about 75 mcg or 19% of RDA). Folates are important in cell division and DNA synthesis. When given during peri-conception period can help prevent neural tube defects in the baby.

Its herb parts are also rich in many invaluable essential vitamins such as pantothenic acid (vitamin B5), pyridoxine (vitamin B-6) and thiamin (vitamin B-1). These vitamins are essential in the sense that body requires them from external sources to replenish.

Fresh herb is also containing small amounts of anti-oxidant vitamins such as vitamin-C and vitamin-A.

Lemon grass herb parts, whether fresh or dried, are rich source of minerals like potassium, zinc, calcium, iron, manganese, copper, and magnesium. Potassium is an important component of cell and body fluids, which helps control heart rate and blood pressure. Manganese is used by the body as a co-factor for the antioxidant enzyme, superoxide dismutase.

Winter melon
Winter Melon is rich in Vitamin C which is round to 30% and Zinc which is close to 7% these two vitamin actually help us fight cold or flu. It contains Calcium, Iron, Copper but there percentage is very less almost 2% if you have 1 full cup of it.

Cold extraction
Cold water extraction is the process whereby a substance is extracted from a mixture via cold water. It is a type of fractional crystallization. The process generally involves taking a mixture of substances, dissolving them in warm water, and then rapidly cooling the mixture. The insoluble compounds precipitate out of the water, while the soluble ones stay dissolved. The solution can then be separated

by filtration or decantation. This process works by exploiting the differences in solubility (with respect to temperature) of different substances in a mixture.

Boiling
Boiling is the rapid vaporization of a liquid, which occurs when a liquid is heated to its boiling point, the temperature at which the vapour pressure of the liquid is equal to the pressure exerted on the liquid by the surrounding environmental pressure.
