In g redien ts: For Batter: Gram Flour 250g ms Maida 50g ms Salt to Taste (1/4tsp+1/8tsp) Bakin g Soda 1/4tsp Water As Required (325g ms) Oil - 2Tbsps (To Mix with Flours) Oil For Fryin g Bon das For Curry: Potatoes 750g ms Green Ch ilies 11 Gin g er Small Piece Cumin Seeds 1/4tsp Mustard Seeds 1/4tsp Asafoetida A Pin ch Curry Leaves Few Ch opped Corian der Leaves 1Tbsp Turmeric Powder 1/4tsp Salt To Taste Oil 21Tbsps

Preparation s: Wash potatoes an d place th em in a bowl. Add water till all th e potatoes are submerg ed in water. Place th is bowl in pressure cooker an d cook th e potatoes. After first wh istle lower th e flame an d cook th e potatoes for 10 to 12 min utes. Wh en th e pressure cooker cools down remove th e bowl an d peel th e potatoes. Grin d g reen ch ilies an d g in g er to a coarse paste in a mixer g rin der. Fin ely ch op th e curry leaves. Meth od: Curry: Heat a pan an d add oil to it. Wh en oil is h ot add mustard seeds an d asafoetida an d fry for few secon ds. Th en add cumin seeds, ch opped curry leaves, g in g er g reen ch ili

paste, turmeric powder an d salt. Mix & fry th e season in g well. Th en add boiled & peeled potatoes an d mix mash in g with th e ladle. Add ch opped corian der leaves an d mix ag ain . Th e curry is ready to make bon das. Spread th e curry in a plate to cool. Batter: Take g ram flour, maida an d salt in to a mixin g bowl an d mix well with fin g ers. Add oil an d rub with fin g ers to in corporate th e oil in to th e flour. Add water slowly an d mix to prepare batter of coatin g con sisten cy. Make a smooth batter. Batter sh ould be of coatin g con sisten cywh en fin g er dipped in th e batter & removed, batter sh ould coat th e fin g er even ly. Keep th is batter aside for 30 min utes. Makin g Aloo Bon das: Heat a pan an d add sufficien t oil to fry th e bon das. Spread a paper n apkin in a plate an d keep it ready. After fryin g th e bon das remove th em on to th is paper n apkin to soak excess oil. Just before fryin g add bakin g soda to th e prepared batter an d mix well. See th at th ere are n o lumps in th e batter. Wet fin g ers an d take a portion of th e curry in to th e palm. Form a ball of th e taken curry portion . Similarly make balls from th e prepared curry. Drop a ball in to th e batter an d coat it even ly. Th en carefully drop th e batter coated curry ball in to th e oil an d fry on medium h eat. Turn th e bon das an d fry till th ey are even ly fried. Fry till th e bon das turn g olden in color. Th en take out th e bon das from oil with a slotted ladle an d place th em on th e paper n apkin wh ich will soak th e excess oil. Similarly fry all th e bon das. Serve h ot with an y ch utn ey or ketch up. Van kaya Bajjilu (Brin jal Fritters): To th e leftover batter add some red ch ili powder, salt, cumin seeds, ch opped corian der an d mix well. Take a brin jal (Ch utn ey Variety) an d wash it. Slice th e brin jal in to even th ickn ess pieces. Add th e brin jal slices to th e batter an d coat th em well with th e batter. Now carefully drop th e batter coated brin jal pieces in to th e h ot oil an d fry on medium h eat. Turn an d fry till th e bajias are g olden in color. Drain th e bajias on to a paper n apkin to soak excess oil. Serve h ot with an y ch utn ey or ketch up. Poin ts To Remember: Use salt an d ch ilies accordin g to taste. As soon as th e pressure cooker cools down , remove th e boiled potatoes from th e cooker an d drain all th e water. If th e boiled potatoes are kept for lon g time in th e water th ey were cooked, th ey absorb some water an d become mush y. So drain th e water as soon as th ey are cooked. Cool th e potato curry completely before makin g bon das. Make a smooth batter with out an y lumps. Just before fryin g bon das add bakin g soda an d th en mix th oroug h ly.
