*tasting + practical notes about some varieties:


arugula- we love this arugula. it is pungent, nutty + crunchy and quite bolt resistant. we hope to be able to grow this for the whole season pending heat and flea beetle damage. a drier season will intensify the pungent flavor. beans-dragons tongue- a 6 broad yellow bean with purple stripes. stripes are more vivid during sunny weeks and disappear when cooked. these are really juicy and stringless and therefore awesome served in fresh with dressing as a side or in salads. beans-provider-round, straight, 5-8 long-a classic green bean. beans-red swan- 5 long dusty rose-colored snap bean bred in Minnesota. turns bright green when cooked. our three beans, served fresh of course, make for an absolutely beautiful display. beets- we have three varieties available for purchase separately or mixed depending on weekly availability. together the three look amazing: a mix of bright gold, magenta + white striped, and blood red. the golden and chioggia have green tops while the bulls blood have red tops making the display even more outstanding. beets will be available with tops attached as long as they are servable and removed the day of receiving to prevent root softening. order guide will specify availability regarding tops. broccolis- our large heading variety was chosen because of its large 6-8 uniform, tight blue-green heads. a classic broccoli. we are excited to offer a broccoli raab this season as well. the raab variety we have chosen has small broccoli florets but earns points for its leafy nature. with a little lemon zest and loads of garlic it is a favorite side dish of ours-hands down. cabbage- we have two early varieties: red express and golden acre. red express is a small brilliant purple variety. the cream colored golden acre averages 3-4 pounds each- a tender and sweet cabbage. look for

gunma in the late season. it is a flat-topped cabbage with a reputation of very small, tender cores and large outer leaves suitable for wraps. carrots-scarlet nantes- classic cylindrical orange carrot with blunt tips + sweet, crunchy flesh. the best carrot. carrots-heirloom mix- our heirloom mix contains yellow, orange, red + purple carrots in varying quantities. cucumbers- we have opted for a thin skinned, consistently shaped, 8-10 long cucumber and a small seed cavity with restaurant kitchens in mind. stays firm in storage. should be available all season! eggplant- we have the long, thin light purple pingtung long, the pear-shaped white and purple striped Italian heirloom, Listada de Gandia, and a very dark purple slightly slender variety, Diamond. kale- we have three varieties, each bringing their own color and texture to the mix. nero di toscana is a flatter leaf great for raw preparations while dwarf blue curled scotch and redbor are curly, bringing loft and texture to all dishes, cooked or raw. each is a different color: nero is dark green, dwarf blue curled scotch is blue-green of course and redbor is magenta. melon-collective farm woman- this small, 2 pound, honeydew melon stores well and is awesomely floral. melon-minnesota midget- a personal portion, sweet + musky. melon-schoon hardshell- a larger 5-8 pound muskmelon with a hard shell-makes for a good shipper with thick + sweet flesh. mustard greens- ruby streaks was adored by chefs last season. it has deeply serrated, almost lacy, purple and green leaves. we added the purple-veined mizuna to the lineup this year. both are great raw or cooked. their mild spice will fluctuate with temperature and moisture levels. squash-Thelma Sanders- a superior acorn squash. we received countless rave reviews about Thelma. up again the classic dark green acorn squash there is no contest. we have retired the classic dark green and opted to take Thelma along with us on the journey. squash-red kuri- 3-4 pound tear drop shaped winter squash with bright orange, thick, smooth, and sweet with drier flesh like butternut. tomatoes-heirloom slicer-this is going to be our least intimidating or perhaps most boring heirloom tomato. however, it is consistently 3-4 inches across with full flavor and stores well making it a good staple to the kitchen.

tomatoes-medium mix- we have some impressive medium-sized heirlooms that make a good mix fresh in salads or pastas or whatever. jaune flame is bright orange and perfectly sweet, green zebras have green and yellow stripes and a full tomato flavor and the speckled romans are a beautiful pink and red striped roma with flecks of gold. any other medium sized fruits from our beefsteaks might be added in. lots of color is a guarantee! tomatoes-heirloom cherry mix- red and yellow bite-sized sweet treats. tomatoes-heirloom beefsteak mix- gold medal, Hawaiian pineapple, Italian heirloom, mortgage lifter + soldacki make up the spread of our beasts ranging in color from light yellow with red accents to orange and pink to deep red. all are selected for full flavor and meaty middles. tomatoes-heirloom pastes/romas-we have two romas that are super fleshy and delicious. these cook down to a nice sauce in no time at all. watermelon-quetzali- we have this thing against hybrid seedless watermelons. its just wrong. but we did find an open-pollinated super sweet and delicious watermelon with almost no seeds at all! this should cut back on prep time tremendously! sweetness in all melons is greatly increased during hot, dry spells.
