In the world of fashion magazines, the September issue is always
a big one. Autumn/winter is the pivotal season in the designer
calendar, with trends that always seem so much more directional
than those that appear on the spring/summer catwalks. Hence,
come late August having done the beach and tired ourselves
of T-shirts we style mavens are drumming our fngers waiting
to discover the looks that are about to leap into our wardrobes.
Tis month in Harrods Magazine, we celebrate the worlds
most recognisable fashion house. Having all but reinvented
womenswear back in the 1920s and 30s, Coco Chanel went on to
create some of the most legendary fashion pieces in history, from
the tweed jacket to strings of pearls, to the little black dress and

FASHION Tim Soar
Fashion-forward women are in the throes of a love afair
with masculine tailoring this season, making an ideal
context for the unveiling of Tim Soars debut collection
of womenswear. Since launching menswear in 2005,
Soar has honed an aesthetic he describes as the point
where tailoring and sportswear meet. With an early-
90s minimalist infuence and of-kilter proportions
reminiscent of Japanese design, Soars style translates
smoothly to his latest venture. Yet while the leap into
womenswear might chime perfectly with the current
sartorial mood, the collections success is down to more
than just fortuitous timing on Soars part. For although
he was confdent that this was the right time for
menswear and womenswear to meet, he was also
spurred on by sheer demand, particularly when fashion
writer Sarah Mower asked him to make her a coat after
admiring the AW10 menswear collection.
Working with womenswear has been a liberating
experience for Soar. He admits that, although he
expected the design to be the biggest challenge (with
menswear youre designing for yourself; you have this
narrative with your designs that relates to you in some
way, shape or form), it was the technical part of the
process that proved most difcult. A lapelled dress with
a slit back was, he says, fendishly difcult to get right.
But the real puzzle was how to make the tailoring
masculine without becoming too blokey. Dozens of
rethinks later, the collection is a smooth continuation
of the menswear, ftted without being tight, fattering
to the contours of a womans body with a satisfying
tomboy bite. Tink a long, sleeveless blazer, a
single-breasted coat dress, a varsity jacket with leather
sleeves and sheepskin collar, and a defantly minimal
slash-necked dress. I wanted these garments to work
a bit like T-shirts do for men To have an easiness that
womenswear doesnt normally have.

EXHIBITION Degas and the Ballet:
Picturing Movement
Te depictions of dancers that Edgar Degas created more than a century
ago have become some of the defning images of ballet in art, but in
their day these were ground-breaking works that divided gallery-goers.
As an Impressionist, Degas was part of a movement that sought to bring
a new realism to art by escaping conservative strictures. Now the Royal
Academys exhibition the frst of Degas work in the UK illustrates
the evolution of his techniques for evoking movement in drawing,
paintings and sculptures, as well as his use of the emerging technology
of photography. Comprising more than 80 works, the exhibition
showcases celebrated pieces including Little Dancer Aged Fourteen,
Dancer Posing for a Photographer and Te Star: Dancer on Point.

FILM Jane Eyre
Filmed many times before, the story of the young Jane Eyre and her
turbulent relationship with Rochester, the tempestuous master of the
house where she works as governess, is brought to the screen in a new
version by director Cary Fukunaga. Fukunagas flm reaches out to
new audiences yet stays true to the passion and Gothic romance of
Charlotte Bronts novel. Mia Wasikowska (the star of Tim Burtons
Alice in Wonderland) co-stars with Michael Fassbender (Inglourious
Basterds), who has the looks ideal for Rochester, with fne support
from Judi Dench, Sally Hawkins and Jamie Bell.
Jane Eyre opens on 9th September in the UK
BOOK Absolutely: A Memoir by Joanna Lumley
Joanna Lumleys life is every bit as varied as her flm and TV roles.
Having been born in India at the tail end of British rule, Lumley
embarked on a career that put her at the heart of fashion and society
throughout the Sixties and Seventies, frst as a model for the English
dress designer Jean Muir, and then as an actress, becoming a Bond girl
and then the star of the TV action series Te New Avengers. She then
reinvented herself as a sublime comedy actress in Absolutely Fabulous.
But there is major substance to Lumley, too, as proved by her
triumphant campaign for the rights of Gurkha veterans of the British
Army. Absolutely is the years essential showbiz memoir.

BOOK Jamies Great Britain by Jamie Oliver
Jamie Oliver is the man to turn to for all thats best of British in
the kitchen. Te chef s restaurants, books and television series have
made him internationally renowned, but his roots go back to his
parents pub in Essex, where he frst began to cook. Now Oliver
shares more than 100 recipes that together portray the national
culinary character. Tat means classic dishes, a few that have a
centuries-old history in Britain, as well as some contemporary
recipes from the community of more recent immigrants.

FILM Drive
French director Jean-Luc Godard once said, All you need for a movie
is a girl and a gun. But add a car with a moody, silent type behind
the wheel and then youre really talking. Te sublimely pared-down
Drive was the buzz of this years Cannes Film Festival; audiences were
enthralled by this action thriller, which harks back to some of the best
cinema of the late 60s and early 70s. Ryan Gosling plays the kind
of role that you could imagine played by Steve McQueen or a young
Clint Eastwood: Hollywood stunt driver by day, getaway driver by
night. His life has no emotional attachments, until its thrown into
disarray by the arrival of a woman (Carey Mulligan) whom he wants
to protect; but soon his own life is in peril.

EXHIBITION Postmodernism: Style and
Subversion 19701990
Far from being dryly academic, this sprawling landmark survey of
perhaps the most infuential movement of recent decades is crammed
with playful fun and is a must for anyone interested in modern style.
Following on from the clean lines and pure abstractions of the Fifties
and Sixties, everything changed as Postmodernisms irreverent mash-up
between past and present shook up all the arts in a riot of exuberant
colour, bold patterns, artifcial-looking surfaces and freedom in design.
Represented with entertaining dazzle at the V&A, the exhibition
features the iconic sensibility of Grace Jones in music videos; the
big suit David Byrne wore in the 1984 Talking Heads concert flm
Stop Making Sense; and Jef Koons bust of Louis XIV, an outrageous
parody of classicism in stainless steel. Paintings by Andy Warhol
and Robert Rauschenberg are also featured, as well as the seminal
graphics of Peter Saville, whose designs defned Factory Records
almost as much as the music of Joy Division and New Order did.

BOOK That Woman: The Life of Wallis
Simpson, Duchess of Windsor by Anne Sebba
In a year that has been lit up by a royal wedding, Anne Sebbas
biography looks back at the woman at the centre of a romance that
cast a shadow over the throne three quarters of a century ago. Wallis
Simpson was the character who so caught the heart of the Prince
of Wales that months after being crowned King Edward VIII he
abdicated rather than renounce his plans for marriage to the twice-
divorced American. Delving into the high society of the East Coast
and the sophisticated jet set of the post-war years, Sebba reveals the
inner workings of this strong-willed personality, who spawned as
much rumour and gossip as any latter-day celebrity, and whose perfect
coifure and outfts made her a style icon who is still infuential.

MUSIC Brian Wilson Reimagines Gershwin
Te unpredictable Brian Wilson in concert is always an exciting
prospect, but this showcase for his latest project is particularly special.
Te most recent album from the great composer of the Beach Boys
hits is a meeting of minds across the decades with one of the
founding fathers of American popular music. In the 20s and 30s,
George Gershwin took emerging jazz and brought it into the
mainstream with musical numbers that continue to evoke a seductive
atmosphere at the mere mention of their titles: Rhapsody in Blue,
Summertime and Someone to Watch Over Me. Now Wilson uses
his gift for harmony to reinterpret Gershwins music and add a novel
twist to It Aint Necessarily So, I Got Rhythm and other eternal
standards. Te evening will also feature classic Beach Boys songs.

FILM Tinker, Tailor, Soldier, Spy
For spy afcionados, there can be no richer era than the Cold War,
no better chronicler of the uncertain allegiances between the Soviet
Union and the West than John Le Carr, and no novel of his more
enthralling than Tinker, Tailor, Soldier, Spy. In this subtle chess game
of a tale, the task of rooting out a mole within British intelligence
falls to George Smiley, an ageing ofcer who has developed the art of
being underestimated into a lifelong career. Te story was originally
shown as a 1979 BBC series starring Alec Guinness; now, in a
masterstroke of casting, Gary Oldman plays Smiley, with the cream
of male British screen talent arrayed around him in the form of
Colin Firth, Mark Strong and Benedict Cumberbatch. Te director
is Tomas Alfredson, whose critically acclaimed Let the Right One In
demonstrated a mastery of slow-burning tension.

Oh my god, its muy caliente, right? Making her entrance into a sea-
facing suite at the Hotel Martinez in Cannes during the annual flm
festival, Zoe Saldana could easily be referring to her flm career. In fact,
shes commenting on the muggy room temperature and, although attired
for south-of-France heat in a light summer dress, Saldana marches over to
open a window and let the Mediterranean breeze blow in.
As the Pandoran warrior-princess Neytiri in James Camerons Avatar,
she was fervent, bright-eyed, defant and sexy, as nine-feet-tall, blue-
toned aliens go. As deep-space xenolinguist Uhura in J.J. Abrams Star
Trek, she brought smouldering, sultry elegance to the perilous cosmos.
In the space of two franchise behemoths, Saldana morphed from a
maybe-star into a full-on Hollywood supernova. Not too shabby for an
actress who might have survived the Britney Spears vehicle Crossroads
and impressed Steven Spielberg and producer Jerry Bruckheimer, yet
struggled to fnd her way in an industry that often sends black and Latina
actors down typecasting plugholes she herself being half Dominican
and half Puerto Rican. Aware that complaining wasnt going to help her
cause, shes kept a dignifed silence about her worst encounters, while
acknowledging the challenges shes faced.
Sixty years ago, in the years of Ricardo Montalban and Rita
Hayworth, they had to do what they had to do, she observes. But
now Latinos are becoming more integrated in society, and art has been
evolving along with it. Tose stereotypical roles are always going to be
there, but I will never be a part of them, or of anything that I feel is
misrepresenting us, or only enhancing one aspect of our culture.
Prior to landing Avatar, Saldana admits she was getting sick of portraying
women who just cried all the time, or were emotionally compromised.
Wanting to use the vigorous physicality that years of serious dance training
gave her, shes now in the throes of a kick-ass phase, following Avatar and
Star Trek with her highest-profle action heroine role yet in this months
Colombiana. Sprung from the same adrenalised hit factory that yielded
the Liam Neeson thriller Taken and following much the same revenge
formula the flm features Saldana as Cataleya, a girl whose parents are
murdered before her eyes by a drug cartel and who grows up to become
an assassin with the express purpose of doling out payback.
To be able to play a character where you get to do what men are
predominantly known to do is awesome, she grins. Te intensive
training that goes into starring in an action thriller like Colombiana,
and the close-quarters baddie-bashing required of Saldana on set,
however, does take its toll. And the 33-year-old actress says she is feeling
it more and more these days. My mom tells me I look like a map when
I come home, because Im black and blue all over the place, she says.
Im addicted to the adrenalin of being physical, but Im fnally entering
the consciousness of mortality. With Avatar, I was fne. I would get hurt,
get up, brush it of and just keep going. But my body feels like its aged
10 years since then. It cant reboot itself as quickly.f
She captivated critics and audiences alike as Neytiri, a blue,
nine-foot-tall alien in 2009s Avatar. Now Zoe Saldana
is back in human form for her upcoming lm Colombiana

Colombiana also sees Saldana displaying an
impressive facility for using hand artillery. She
discloses where her degree of comfort comes from:
Latinos hunt! My dad and his brothers were
countrymen from the Dominican Republic, so I
grew up with a rife around, she says, adding with
a laugh, Now that Im an adult and I know what
weapons represent, I would have wanted my father
to have used a little more caution, keeping weapons
away from us. But my stepfathers also a hunter, and
my partner in life comes from a family of hunters,
so Im comfortable having guns around.
Although she regularly hits the fring range with
her partner, actor-businessman Keith Britton,
Saldana doesnt hunt and insists shes never taken a
life herself except maybe an ant here and there.
But she has no qualms about her friends and family
taking part, diferentiating them from people who,
just because they have money or want a rug in their
living room, will go to Africa and kill an animal thats
at the point of extinction. Teres no dignity in that,
theres nothing to respect about that. My partner and
his family will eat and use everything of an animal
theyve killed. And I take pleasure in that, because
I can have venison stroganof and really enjoy it.
As for Britton, Saldana has been with him for
10 years, and they got engaged last summer. Saldana
calls him the right man to be growing old with,
because he holds his own. We were very young when
we got together, and were very respectful of each
others lives and cultures. I exercise my right to be
who I am, and to think the way that I do.
Next year, Saldana is due to return to Pandora, the
fctional planet thats made her famous, for back-to-
back shoots on the Avatar sequels. Despite its success,
youd imagine that Saldanas reaction at the prospect
of taking herself of the market for nearly 18 months
during what is arguably the peak of her career might
be a starry strop. But she expresses the complete
opposite. Are you kidding? she squeals. Do you
know what it means? It means that Ill be employed
for over a year in a business thats unpredictable!
Such pragmatism is a sign both of her New York
work ethic were tough, were feisty, we work too
much and we dont take breaks and being raised
to seize responsibility for her own life.
Saldana grew up in Queens until her hippie
Puerto Rican mother moved the family to the
Dominican Republic at age 10, after Zoes father
died. It was there that she discovered dance,
studying ballet and other forms at one of the
countrys most prestigious academies. When she
headed back to New York at 17, Saldana segued
into acting by joining a youth theatre group that
put on positive-message plays for teens coping with
substance abuse and sexual issues. Soon, she found
herself recruited by a talent agency and, at the age
of 21, landed her debut flm role as a bolshie diva in
Center Stage (directed by the National Teatres own
Nicholas Hytner).
In preparation for Avatars 2 and 3 and her
reprisal of Uhura in the Star Trek sequel this
autumn (she hopes she gets more to do this time
around), Saldana opted to take the frst half of 2011
of. My body needed it, and so did my brain. I
needed to decompress. And she couldnt be more
delighted at the personal freedom thats come with
stepping of the gruelling Hollywood treadmill. I
eat what I want, Ive stopped exercising, and I have
a life as opposed to just waking up and running
around, hopping on a plane, doing this, doing that,
exercising, going to bed early, she says. Ive been
spending a lot of time with family, travelling and
having fun and staying out really late.
She beams with pleasure. I love love love going
out! Teres nothing better than dressing up, putting
on make-up and heels and going dancing. I love it,
and why not? Im human and Im young and Ill be
telling you the same thing when Im 70 years old. H

In the past few seasons, my work has been based
around the human form, and weve been playing
around with the idea of armour. As descriptions
of new fashion collections go, this from the
British-Italian designer Antonio Berardi, famed
for his sensual and form-ftting cocktail dresses
and eveningwear, would appear moderately benign.
Yet, as Berardi describes his place within the
relatively challenging institution that is British design,
a tinge of pathos reverberates through his voice.
A contemporary of the fted Alexander McQueen
and John Galliano (Berardi worked for four years
with the latter), Berardi is content, successful and,
crucially, independent. He is neither reliant on a
conglomerate of behemoth proportions nor obliged
to kowtow to the demands of outside investors.
A rock within the UKs creative frmament since
his Central Saint Martins graduate collection in
2004, Berardi has established not only a steadfast
aesthetic (simple, beautiful, undercut with femme-
fatale coolness) but also a resilient business. As
the London Fashion Week website describes him,
Today, Antonio Berardi is one of the very few
internationally infuential designers operating a
completely autonomous company.
Berardi is also a rarity in the world of fashion
for his honesty, humility and hint of vulnerability.
Whereas McQueen and Galliano struggled to
admit their weaknesses until, arguably, it was too
late, Berardi is open about the burdens of being
a successful designer.
I can imagine the pressure that was on both
John and Lee [McQueen], he says. It was not
just a case of sitting down and designing, doing all
those things you love in order make your collection
wonderful. [For them] it was also a case of being
trawled all over the place doing an opening here,
a photo shoot there, an interview here.
John would come out at the end of the catwalk
show and people would think, God, how confdent
he is. And I think it was that part of his persona
that kicked in for those two minutes. Ten John
would go back to being incredibly shy; thats how
he is. Tere really does need to be some sort of care
package. Most of us are quite fragile creatures even
if we become theatrical when we put on shows.

armour suddenly makes sense. Tis is Berardis
own shell, which strengthens him for the
world outside; his aesthetic established and
unswerving, his business solid and stable,
his protection in place. With the benefts that
experience can bring, he designs not for the
critics but for his customers. When you become
established, its about how, from one season to the
next, your customer still feels like she needs to buy
from you, he says. She has to feel comfortable
in herself, and once she has found that comfort,
its easy to build on. My customer is 35-plus, she
has disposable income, she is probably a working
woman, and shes bold and assertive. In other
words: she is a woman in search of sartorial armour.
Perhaps she is like Victoria Beckham, or
Transformers actress Rosie Huntington-Whiteley
two of Berardis celebrity fans who are in search of
red-carpet protection. Celebrities become kind of
like advertising for the brand, says Berardi. Were
lucky, because people come to us. Ill give you an
example: yesterday, the pre-collection went up on
Style.com, and LWren Scott [the designer and
stylist, and companion of Mick Jagger] called in
three dresses for Nicole Kidman. With all the labels
that exist, its great to think that somebody out there
would even consider us. It makes me quite proud.f

It is no coincidence that Berardis ultimate infuence
is the chief of all successful independent designers,
Azzedine Alaa, an elusive man who eschews both the
classic fashion-show format and the world of fashion
politics. Yet Alaa is still blessed with unmitigated
global success and a legion of famous fans.
Design is something that Azzedine is so
passionate about. He does it on his terms, says
Berardi. He does it quite slowly, and he revisits
himself. I think, in a strange kind of way, we do that
too, on a very small scale. Hopefully, everything is as
thought out as it would be in an Azzedine collection.
Its like being in a laboratory. You dont fnish a piece
of research so you can move onto the next thing; one
thing leads to the next, and thats how I view my
work. As a designer, Im an individual and, after so
many years, I still have my company, and its growing
season after season. So Im really happy with that.
Berardis unique combination of two cultures the
sensuous Italian and the straight-talking British is
his ultimate trump card. My British side is a lot
more tailored and defnitely edgier than the Italian
side, which is much more sensual and romantic, he
says. My Italian side is the one that will sit down
and discuss at length; its much more lyrical, and it
marries quite beautifully with the British side, which
is much more stif-upper-lip, he says, laughing.
And so, the duality emerges in the clothes: stif
in their structure and poise, but romantic in their
inclusion of lace, velvet and metallic brilliance. As
his new collection steels itself for the autumn/winter
battle ahead, Berardi has only one piece of advice for
his army of female customers: Invest in a coloured
cocktail dress. Every woman has an LBD, and she
needs to invest in something colourful for a change.
I like short its firty but I like the idea of long
too. Part of where I come from says that the more
covered up you are, the more sensual you look.
As with the man as well as his collection, all the
fun of armour is peeling back the layers to reveal the
delicacy underneath. H

How to wear
VICTORIANA
At last, an antidote to all that
sleek minimalism: refashion
yourself as a Bront, a Browning
or a crafty gamine BY LAURA BARTON
To wear Victoriana after a summer of even moderate
fesh-baring might well prove an inhibiting task. Just how
does one assume the correct mental attitude to wear the
seasons high collars and demure hem lengths without
applying half a can of spray-starch to ones brain?
In the Victorian era, bare surfaces were not tolerated;
dressers and tabletops were covered with ornaments,
and walls were adorned with decorative techniques
from marble-efect to wainscoting. So the challenge this
season is, in essence, to view yourself not as a woman,
but as a Victorian parlour in which no surface may be
left unadorned. Accordingly, when you climb into your
Antonio Berardi gown, with its shimmering bodice
and sleeves, its high, gauzy neckline and its elegant skirt,
it may help to think that you are not getting dressed
youre decoupaging yourself.
Te Victorian era was not an age when respectable
young ladies slouched about in Ugg boots and miniskirts.
On the contrary, this was a morally upstanding period.
So it may also be helpful, as you fasten up your Roland
Mouret outft the mutton-sleeved jacket with its trim
waist and long cufs, and the wide-pleated skirt or your
Nicholas Kirkwood lace-up shoes, to tell yourself that
this is not so much an outft as it is a display of morals.
One might say something similar of your gorgeous
Nina Ricci ensemble, all watery-hued silks and high,
rufy collar. Te way to wear this prim little number is
to imagine that you are a fgure of great moral import a
schoolmistress, for instance, or an eager young preachers
wife, devoted to rescuing impoverished gutter-dwellers
from a life of gruel, sin and tavern brawls.
Still, if the notion of tavern brawls and sin appeals, you
might like to consider wearing your Emilio Pucci gown
with the knowing wink of a fallen woman. Floor-length
though it may be, this is no decorous dress; its bejewelled
surface allows a glimpse of fesh that would make even the
most jaded member of the Beefsteak Club blush.
Finally, the wearing of your Chanel trouser suit will give
you an opportunity to channel your inner ragamufn. Tis
can be taxing for beginners, but you will soon get the hang
of it: shufe your neck in that prim white collar, slide your
hands into those grey tweed pockets, and walk with a gait
worthy of the most Artful of Dodgers. Size up each passer-
by as if he might be the owner of an expensive pocket
watch, a silk handkerchief or, at the very least, an orange.
Should your new demeanour get you into any sort
of trouble with Her Majestys Constabulary, do explain
that this is merely a seasonal afectation and that normal
conduct will resume come spring.

enriching. Tis is a true collaboration; we did it
together and the result is so Diane and so H.Stern
as well, he says. Von Furstenberg seconds this idea:
We enhance one another, she says.
Now in their seventh year of working together, the
duos latest collaboration is the Sutras Collection,
comprising wonderfully chunky gold and crystal
bracelets, pendants, earrings and rings. Te starting
point was von Furstenbergs interest in Indian
Mughal jewellery, such as the 18th-century ring she
wears. Like the antique Indian designs, each piece
is reversible. On the back are mantras or sutras
such as Love, Laughter, Freedom, Harmony,
Confdence, Truth and Life, which are engraved in
characters based on von Furstenbergs handwriting.
Te designs also feature rock crystals that have a fat
upper surface and a rounded, or cabochon, lower
surface to enhance the appearance of depth. As von
Furstenberg says, You just want to swim in them.
If India is an infuence in the Sutras Collection,
for the Grupo Corpo Collection H.Stern looks to its
homeland, joining forces with the Brazilian modern
dance group whose mesmeric style is something
of a hybrid of graceful ballet and rhythmic samba.
Its an unusual partnership that again demonstrates
Sterns ability to push boundaries, and the jewellery
inspired by the dance group is equally innovative.
Te H.Stern designers took infuence from all stages
of the dance production, from conceptualisation and
choreography to costume and set design. Te sinuous
contortions of the dancers bodies were also an
important infuence, and became translated into the
elegant curves of the pieces. Noble gold (H.Sterns
Its imperative that jewellery designers think outside
the box. So says Roberto Stern, and he should
know; he is, after all, the President and Creative
Director of one of the worlds most iconic jewellery
houses, H.Stern. He describes the Brazilian houses
designs as contemporary jewellery done in an old-
fashioned way. Audacious and unusual ideas, with
a hint of Brazilian famboyance, are executed using
artisanal craftsmanship; concepts may be modern,
but the importance of tradition remains at the heart
of the brand.
Founded by Robertos father Hans, a German
migr, the company shares its name with the
German word for star. And the house has
appropriately engaged in a number of stellar
collaborations. It was Robertos vision and spirit that
frst encouraged Diane von Furstenberg to approach
him with her ambitions for a collaborative collection
in 2004. Von Furstenberg pursued H.Stern with
vigour. I wanted bold, and I didnt think anyone
else in the world could deliver this boldness, she
explains. She is irrepressibly enthusiastic in her praise
of not only the result but also the man and the house.
Roberto has taken H.Stern to a whole other level,
she says. He is a real jeweller and, even though he is
a brilliant businessman, he is also an artist.
Te striking thing about the H.Stern and Diane
von Furstenberg collaboration is that there is an
efortless synergy between the two brands, their
aesthetics perfectly complementing one another.
Tis is because, Stern explains, it is a totally diferent
experience from commissioning someone to design
jewellery for you, and thus is more creatively

Bold, sinuous curves and Brazilian heritage are also
central to the Oscar Niemeyer Collection. A titan of
international modern architecture, Niemeyer is the
designer of some of the 20th centurys most iconic
buildings, including the Braslia cathedral and the
UN headquarters in New York (a collaboration with
the legendary Le Corbusier). Niemeyers passion
for and command of curvaceous lines is seen
throughout his work, and is echoed in the H.Stern
collection. Tis is the frst jewellery collection
Niemeyer has personally approved, and it takes direct
inspiration from his sketches and buildings. Te
collection comprises six ranges, including Pampulha
a series of white-gold and diamond rings, earrings
and bracelets that refect the undulating roof of the
So Francisco de Assis church in Pampulha, Brazil,
which Niemeyer designed in the 1940s. Te wavy
yellow-gold cufs and rings in the Copan range take
their cue from the concrete So Paolo building of the
same name, while the concave and convex domes of
the National Congress building inspire the sweeping
lines of a yellow-gold bracelet.

As Design Director of Topman, Gordon Richardson is one
of menswears most infuential fgures, responsible for steering
the brand to both critical and commercial success. Here,
he talks about young talent, eclectic style icons and how
menswear is smartening up its act for the new season.
Te AW11 Topman Design collection is inspired by Brassas
ethereal photographs of Paris in the early 1930s, and lots of
vintage clothes we sourced that evoked Te Kings Speech. We had
a specifc muse: a young guy who worked in our studio at the time who
always wore a mixture of old and new in a very modern way.
Teres defnitely a mood afoot for smartening up, for clothes with a more
sartorial edge. Casualwear the one sure way a young person could look
diferent from previous generations is now so omnipresent that a suit suddenly
looks like a cooler and more subversive choice for the fashion consumer.
My three must-have items for AW11 are a suit preferably in a tweed fabric, like
a Donegal; a three-quarter-length tweed coat in a subtle check; and a chunky knit.
Fashion is predominately youth-driven, so its crucial to invest in and nurture
young talent in the industry. Tere are so many rising stars in menswear design.
I think we are more fashion brave than a lot of our competitors. If we
believe in a trend, we pursue it. Tis is backed up by global trend research,
with all design work done in-house to make sure our ideas are distinctive.
A lot of good British design is based on our history and heritage.
As a nation, weve never been shy of expressing ourselves, and that
bequeaths a whole fashion bible of fabrics, styles and characters that
designers can draw on, producing ever more idiosyncratic ideas.
I have a lot of disparate style icons, from Edward VIII to
David Bowie, David Lynch to Serge Gainsbourg, David Byrne
to Keith Richards and Lucian Freud. On any given day, Im a

You can always rely on Paul Smith for a fresh take
on tailoring, and his new collection doesnt disappoint.
For AW11, he takes inspiration from what he calls the
randomness of avant-garde musicians Frank Zappa
and Captain Beefheart, as well as early space exploration.
Tis translates into a contrasting play of textures and
proportions: a shearling fying jacket comes with a silver
sheen; chunky merino knits are paired with narrow
trousers; shirts have abstract animal prints; and a

INTERVIEW
Iconic: despite its size, its a big word to use, especially
with regards to fashion. Often misappropriated in
the enthusiastic gushing of a one-season crush,
the term is rarely accurate. However, it is without
reservation that Diane von Furstenbergs wrap
dress can be described as such. Tis is the dress
that launched a billion-dollar industry, inspired
Newsweek to describe the designer as the most
marketable woman since Coco Chanel, and helped
women to rethink the way they dressed.
Te irony, von Furstenberg would have you
believe, is that she got into fashion a little bit by
accident. (Safe to say, the dress has acquired a
completely unanticipated life of its own.) Te genesis
of her empire was in 1969, when, following her
wedding to Prince Egon von Frstenberg, the
Belgian-born designer arrived in New York with a
suitcase of jersey dresses that she had made at her
friend Angelo Ferrettis factory in Italy. She launched
her label in 1972, driven by something deeper than
just a love of clothes. I went into fashion wanting,
more than anything, to be a woman who could
manage her own life and be fnancially
independent, she says in her velvety drawl.
Von Furstenbergs strength lies in the fact that
she really knows women and what works for them.
What she sells, she says, is confdence. Her ethos for
the brand is to give women tools to be whatever
they want to be. Te allure of the wrap dress, for
example, is that there is an ease to it; its fattering
and practical, and can be thrown on and forgotten
about. Tis is a dream piece for women who are too
busy or having too much fun to worry about
their clothes. Von Furstenberg is a champion of
women, and the ultimate ambassador for her own
brand. She is self-assured, commanding and exudes
a sense of free-spirited luxury that is central to her
aesthetic. With her olive skin, high cheekbones,
long fshnet-clad legs and chunky gold jewellery,
she exudes a firtatiousness that hints at her truly
fabulous, reads-like-a-flm-script past (she was, after
all, a fxture of the 1970s New York social scene and
a regular at Studio 54). Her work echoes this sense
of confdence, joy and opulent bohemianism.

wide-brimmed hats were interspersed
with graphic, almost tribal prints,
rope-tied waists and Mongolian fur gilets.
Tere was also more than a hint of a 70s
infuence, with fuid cobalt and vermilion
draped sequined dresses.
Te collection was her third with Yvan
Mispelaere as Creative Director, and his
presence seems to be invigorating her label.
I found a person who can take all the diferent
ingredients, and protect and respect the past,
yet bring it fresh into the future, explains von
Furstenberg. Mispelaeres appointment is in
part designed to lend integrity to the inevitable
succession of the brand one day (having lost
control of her label for a time in the 80s, von
Furstenberg is now fercely protective of it). It

is also indicative of the fact that von Furstenberg has long been
a champion of young and upcoming talent, something she also
embraces in her role as President of the Council of Fashion Designers
of America. Tere is nothing more exciting than people at the
beginning of their life. Its so inspiring, she says. When youre older,
if youve been successful, you can share your knowledge.
What her protgs must admire is von Furstenbergs ability to craft
a whole world in her brand, from homewares to fragrance to jewellery.
Autumn 2011 sees the latest chapter of her highly successful seven-year
collaboration with jewellery house H.Stern. (Te roof of her Manhattan
apartment and showroom was styled to look like one of her H.Stern
rings; she literally lives in her designs.) Te new Sutras Collection is
striking and confdent something about which von Furstenberg was
resolute from the outset. In the frst meeting with H.Stern, I said,
I want bold. I want big. I want weapons, she says. She is delighted
with the outcome: chunky, curvy gold and crystal pendants, earrings,
bracelets and rings engraved with mantras that pepper von Furstenbergs
conversation: Love, Laughter, Freedom, Harmony,
Confdence, Truth and Life. Von Furstenberg
believes jewellery has an almost talismanic power.
She says the designs help you to be the
woman you want to be, and she is vociferous
about making pieces a woman can buy for herself.
Its been nearly 40 years since serendipity
smiled on Diane von Furstenberg, and the
line shows as little sign of fading as its
owner does. So whats the trick to keeping
it contemporary? I am always curious,
she says, gold jewellery jangling. I see
things so fresh every day. I am curious
and inspired, and I think its down to
my love of life. While Im alive, I want
to enjoy it the best I can. And that is
the secret: an irrepressible youthfulness,
an insatiable vivacity, and a sense of pride
and strength, which proves that there is
so much more to von Furstenberg and
her label than just that dress. H

ashion is delightful in its fckleness. It exists for the
express purpose of making us rethink each season
our objects of desire. Its a fing, a crush, a holiday
romance that burns bright but inevitably fades
with the next seasons infux of suddenly far more
gorgeous prospects. Its fun.
Style, however, is the stuf of true love, which
develops and strengthens over the course of our
sartorially conscious lifetimes. What the truly stylish possess is a
talent for personalising each seasons whims and translating them into
their own unique dialogue. Te stylish know the beauty of classics
an impeccably cut white shirt, a vintage Rolex, a pair of well-worn
Levis that look continually fresh and modern despite an ever-
changing frame of reference.
Shoe fanatics are by their very nature firtatious; they like to court
the many options on ofer. Tis seasons objects of desire include suitors
as diverse as patchwork python-skin boots, multi-strapped Baroque-
detailed Mary Janes and glittery brogues. But there are certain styles
that retain a permanent place on the shoeaholics lust list. One such
shoe is the ballet fat, for its eternal ability to imbue an outft with
a sense of youthful elegance and relaxed sophistication, channelling
decades-apart icons like Audrey Hepburn and Kate Moss.
Of course, not any old pair of saggy pumps will do. Tey need to
have the perfect leg-elongating proportions and precisely the right
design fourishes. And for that we turn, rather appropriately, to Chanel
(Coco Chanel is a paragon of timeless style who, 92 years after the
opening of her boutique at 31 rue Cambon, is still proving her
assertion that Fashion changes, but style endures). Te House of
Chanel is responsible for a number of delicious design classics: quilted
2.55 bags with chain straps; neat tweed suits; and strings and strings of
pearls. But for the shoeaholic it is the ballet pump that really acquires
icon status. Redolent of efortless Parisian elegance,
Chanel ballet pumps add a chic accent to any outft
with that distinctive low cut, slim shape and
feminine bow. My preferred pair this season
nods to two Chanel design rifs: two-tone and
quilted. Toes are subtly embossed with
those curvy, instantly recognisable
interlocking Cs, a reminder of that
romantic provenance. Flat and
indulgently comfortable, they
imbue the wearer with refreshing
unfussiness. Cue another
eloquent truism from
Mademoiselle Chanel:
Luxury must be
comfortable, otherwise it
is not luxury. In other
words, never look like
youre trying too hard
if you want to be
seriously stylish.

The designer behind Wacoal Dia, the new luxury lingerie brand
from Wacoal, nds inspiration in understated Japanese sensuality,

When it comes to clothes, a grand gesture a
statement coat or a killer dress, for example is
all well and good. But its the little details that
make an outft: heels, the right shade of lipstick
and, of course, perfectly ftting lingerie. One
of the lingerie worlds most recognisable names
Wacoal knows this well, and the brands
goal has always been to make women look and
feel their best. However, sometimes women
want more than just spot-on cut; they desire
romance and gorgeousness think lace, tulle
and intricate embroideries. Enter Wacoal Dia,
the luxury ofshoot of Wacoal. Headed up by
designer Atsuko Kamio, the brand combines
a Japanese aesthetic with French couture-style
craftsmanship. Here Kamio talks about making
luxurious lingerie the main event.
Your mother was a fashion designer.
What did you learn from her?
Te frst memory I have is of my mother sewing,
and I often helped her thread needles. I saw patterns
made out of newspaper, and they made me think of
three-dimensional puzzles. Te frst garment I made
was for a doll; it was probably a poorly sewn dress.
But observing, copying, failing and starting over was
good training and I was proud that I could sew
even before I was old enough to go to school.
How did you get into lingerie design?
When I was young, I had a blouse that had gorgeous
drapes fowing from the neck to the chest; it didnt
fow well without curves on my chest. So I decided
to stuf the blouse with clumped-up paper. Tat was
when I realised that a womans curves are beautiful.
I moved to France when I was 20, and I bought bras
embellished with lace. I was attracted to the delicate,
sheer beauty and the well-balanced design rather than
the ft. European lingerie did not exist in Japan at
that time. It was the one of the most stunning things
Id ever seen, and from that moment, I believed that
creating beautiful lingerie was my responsibility.
What sets Wacoal Dia apart from other
lingerie brands?
Wacoal Dia not only has great ft and comfort; the
brand also keeps innovating. Our bras dont cover
up breasts; they shape them, with minimal use of
fabric. Tats the beauty of our bras. I have extensive
experience of both outerwear and underwear, so I
come up with ideas that no one else can copy.
You have cited 12th-century inuences in
the new collection. What are they?
While I was visiting old castles, I fantasised about
time travel. Te collection is based on imaginary
characters, such as a medieval princess who dreams
of being in the future.
What are some of the couture details in
the Wacoal Dia collections?
Simplicity reveals how technology and
craftsmanship determine the perfection of the
whole design. When delicate designs are featured, I
choose the most advanced sewing method for that
part. Just using opulent fabrics with simple sewing
techniques and over-the-top design is not my style.
Are there many differences between
Japanese and French design?
Designs from 18th-century France are similar to
those from Japan during the same period the
mid-Edo era. Figures based on natural shapes and
colours existed before the two countries even had a
relationship with one another. Tese designs were of
the sun, moon, stars, clouds and geometric patterns.
Diferences in history, culture, custom and morals
between France and Japan can be found in design,
but much of the aesthetic sensibility is universal.
What is your interpretation of the
Japanese concept of beauty?
In Japanese art a huge amount of time is spent on
each tiny object. Te Japanese replicate the universe
in a small garden; they breathe life into each cup of
tea. Tis comes from the philosophy of the spiritual
relationship between human beings and objects,
and the ultimate Zen training. Being clever with the
hands comes from calligraphy and the tea ceremony.
What trends do you predict in lingerie?
Some women buy lingerie because underwear is a
necessity; others are buying into a fantasy. I would
like to see lingerie that has creativity, a good ft, and
a vision that connects to a womans dreams. Tats
what the lingerie business needs.
How do you want a woman to feel when
shes wearing Wacoal Dia?
I want her to feel an excitement and energy when
she is surprised by a new way of seeing herself. H

INTRODUCTION
The history of the house of Chanel has all the
romance of a fairy tale. From humble beginnings,
Gabrielle Chanel developed a unique understanding
of beauty and luxury, and created an aesthetic that

go, Mademoiselle Chanel was the best possible
advertisement for the chic, sophisticated look that

When Karl Lagerfeld took over the reins in 1983,
he pulled off a clever reinvention that brought a
contemporary relevance to the brand while retaining
its glorious heritage. Throughout September,
Harrods is celebrating the world of Chanel. From the
Brompton Road windows, where the poetry of the new
womenswear collection is showcased, to pop-up shops
throughout the store, the collaboration culminates
in a sensorial installation on the Third Floor that

taking you? If you work out
simply for the sake of working
out, then the chances are that,
sooner or later, the monthly
subscription you pay to your ftness emporium
will be money wasted. Without goals, sports
psychologists say, boredom soon ensues and
motivation dwindles. What your ftness regime
needs is a focus, and theres no better way of getting
it than taking up a new sport.
Gyms are important for base ftness, but they can
be quite sterile environments that some people fnd
intimidating, says Dearbhla McCullough, Sports
Psychologist at Roehampton University. If you
switch your aim to exercising in order to get ft for a
particular sport, the physical and emotional benefts
can be huge. McCullough says ftness should never
be measured simply in terms of calories burned
and inches whittled away; its benefts are far more
wide-reaching. Studies have shown that people who
participate in sport are better at goal-setting, are
more organised, and are able to keep their emotions
on a more even keel.
And because sport is more unpredictable than
the gym in terms of its demands, you will test your
muscles and joints, spatial awareness, speed and
strength to their limit. Tere are so many variations
in sport that you dont get at the gym, says Louise
Sutton, Manager of the Carnegie Centre for Sports
Performance and Wellbeing at Leeds Metropolitan
University. Te weather, the terrain, the company
and the venue can change from one session to the
next. Your body never knows quite what to expect,
so it is taken unawares. Youre twisting, turning
and testing muscles its impossible to target on gym
equipment. And youll never get bored, which means
dropout is far less likely than at the gym.
Contrary to popular theory, you dont need
Olympic ambition to take up sport. You dont even
need to be young, slim or particularly athletic; all it
requires is that you are motivated enough to enjoy it.
Nearly four million people now claim to go
running regularly in the UK, and this number is
rising. World leaders including David Cameron,
Nicolas Sarkozy and Barack Obama choose the sport
as a means of reducing stress levels and staying in
shape. Its popularity is not surprising: running burns
more calories than most other activities (400 to 550
an hour), gobbles up fat, tones the legs and buttocks,
and is free. Plus, psychologists have proven that the
runners high the elated state experienced after
15 to 30 minutes of aerobic activity really does
exist, and it is among the best ways to boost mood.
Tis year sees the launch of several schemes
designed to get newbies running in groups and
introduce them to the huge variety of running-based
ftness training, from trails and fartlek (Swedish for
speed play) to track and roads.
Te market for running gear and gadgets is huge,
but all you need to get started is a supportive pair
of trainers, some leggings or shorts, a good sports
bra for women and a top made from sweat-wicking
fabric. It is best to go to a specialist running shop
where you will be advised appropriately.
Running is a high-impact sport, but a strong and
fexible body will leave you less prone to injuries.
To train beforehand, try yoga or Jukari Fit to Flex
(which strengthens and stretches muscles using
resistance bands). Kranking cycling for the arms
is ideal for toning the upper body.
Another highly accessible sport is mountain
biking. If you can ride a bike, you can ride a
mountain bike, and the huge attraction of the sport
is its social aspect, with groups meeting to hit trails
and hills around the UK. According to the charity
Sustrans, approximately 75% of people in the
UK live within two miles of the national cycling
network of of-road paths. Tese paths are a great
place to gain confdence if you havent taken to two
wheels in a while. After that, you can graduate to
more challenging climbs and routes.
Te pedalling action works most of the main
muscles in the legs and the gluteus maximus muscles
in the buttocks, as well as strengthening the tendons
without the load-bearing stress of something like
running. Cycle on undulating or challenging terrain
and you can burn around 500 calories an hour as
well as boost your cardiovascular system.
To get in shape for biking, spinning is the
obvious choice, although it lacks the scenery and
unpredictability of the outdoors. Kettlebell training

and ViPR workouts (using a weighted rubber tube
that can be lifted, dragged, thrown and stepped
on) are great for working the upper body, which is
neglected in cycling. It is also worth trying more
unusual takes on indoor cycling, such as the Ciclotte
designer exercise bike.
When buying your frst mountain bike, look
for an all-terrain model with fat (4060mm) tyres
for cushioning on rough surfaces; very low gears
to overcome the drag of ploughing through loose
material while climbing steep gradients; straight
handlebars for wrenching the wheel around
obstacles; disc brakes; and at least front suspension.
Bike maintenance is important; your bike will need
to be thoroughly cleaned after every ride, and will
also need a regular health check at a bike shop.
For those who want another means of getting back
to nature, outdoor swimming is an ideal choice. Long
associated with cross-Channel swimmers, or the batty
bunch who plunge into the Serpentine in Hyde Park
on New Years Day, it is now a sport in its own right,
and considered by many to be more pleasurable than
ploughing up and down an indoor pool, and more
soul-soothing than yoga. Swimming is one of the
best all-body sports, using most major muscles with
each stroke. Water also acts as a giant cushion for the
body and is kind to joints and tendons. Outdoors,
with added wind resistance, turbulence and cooler
conditions, expect to burn around 550 calories an
hour. Te downside is that swimming is non-weight-
bearing, so you will need to include activities like
aerobics, Zumba, weight training or treadmill running
in your ftness regime to build your bones.
It is wise to build up your exposure to the water
outside for a few minutes at a time to get used to it.
If the water is cool, there are precautions you can
take to prevent shivering. Wetsuits can help; they
must be worn in open-water competitions once the
temperature drops below 14C. Having several small
carbohydrate snacks also helps to boost your body
temperature. For a gentle introduction to outdoor
swimming, there are lidos around the country;
or try one of the Outdoor Swimming Societys
introductory swims. And there are lots of mass-
participation events in the UK, including the Great
Swim in the Lake District.
Another fast-growing sport is horse riding.
Youre never too old to take up riding and, with
lessons, the basics are relatively straightforward.
At schools approved by the British Horse Society,
group or individual lessons are inexpensive. Lesson
costs include the loan of a hat, and all equipment;
instructors and horses are regularly assessed to
ensure they meet stringent standards. All you need
are comfortable trousers and sturdy shoes. Riding
in jeans is inadvisable, as the seams rub your inner
thighs. Likewise, dont ride in trainers or other fat
shoes, as the lack of a heel means your foot will
easily slip through the stirrup.
At the gym, try Pilates to help develop the core
strength needed to maintain a good position in the
saddle. Strong legs are essential for riding, so the
indoor rowing machine and classes like Bodypump
(which combines weights and aerobics) are ideal.
Riding will strengthen the buttock, thigh and
leg muscles without necessarily adding bulk. Te
adductor muscles on the inside of the thigh work
hardest, as they are engaged to grip the horse. You
also use the abdominal and back muscles to control
speed and change direction. Riding doesnt ofer
much in terms of calorie burning (around 150 to
170 per hour), but it tones the whole body. And as
a stress buster, it is second to none. H

he Englishmans love afair with
luxurious luggage lost some of
its lustre around the time that air
travel became fashionable. From
the grand and elegant trunks
favoured by the Victorians came
suitcases, then carry-on holdalls,

temperature, and sometimes it just wont grow,
says Adams. We havent cracked it 100%, but were
getting far better at adjusting the atmosphere in the
maturing room. Tats where the experience comes
in, and its what artisan cheese making is all about.
Washing the cheeses also helps develop the
distinctive bloom, with each one rubbed in bowls of
brine and cider. Tis ancient technique was supposedly
discovered by monks who found that dousing cheese
in beer gave it a meaty favour, which was handy when
they were fasting and not allowed to eat meat.
As anyone whos eaten Stinking Bishop will testify,
washed-rind cheeses can have a pungent odour, yet,
inside, the glossy, white fesh tends to be surprisingly
mild and creamy. Golden Cenarth is certainly not in
the heavyweight category of washed-rind cheeses; it
has a pleasant, earthy aroma, and the ivory interior
is frm and lemony when young, developing to an
intense, oozy maturity at about six weeks.
Te favour and texture also change throughout
the year, refecting what the cows have been eating.
In late summer, after they have fed on lush Welsh
grass for several months, Golden Cenarth is at its
glorious best.
Crikey, the milk is creamy then, says Adams.
Were only eight miles from the coast, so it rains a
lot here in the mornings, even over the summer. Its
great for the grass. Te good thing is that it clears
up nicely by about 3pm, just after weve fnished
making the cheese. H

etite, curvaceous and with
delicate, dusky skin, Golden
Cenarth has become a pin-up
of the cheese world. But theres
more to this Welsh beauty than
its looks. Made with organic milk
from the verdant Teif Valley and
hand washed in cider, the cheese
has a rounded character, taking in nutty, savoury
favours and a rich, creamy depth.
Judges at the 2010 British Cheese Awards were
certainly swept of their feet by its charms. Tey
named Golden Cenarth from Caws Cenarth the
Supreme Champion from a feld of more than
900 other cheeses. What made the accolade even
more remarkable was that the cheese had only been
launched two years previously. Its meteoric rise is
almost unheard of in the dairy world, where cheeses
often take up to fve years to achieve such recognition.
Te fame and adulation has come with its fair
share of heartache, however. Carwyn Adams, MD
of Camarthenshire-based Caws Cenarth, admits
that, like all true superstars, Golden Cenarth can
be a bit of a prima donna.
Its quite a temperamental little cheese, says
Adams. If we dont get conditions spot on, it
doesnt thrive at all. To be honest, its been the bane
of our lives trying to get it right, so winning the
award made it all worthwhile.
Caws Cenarth was set up by Adams mother and
father, Telma and Gwynfor, in 1961. Te business
started as a dairy farm, but in 1987 Telma started
producing cheese to add value to the milk. Now that
Telma and Gwynfor have retired, Caws Cenarth
is run by Carwyn and his wife, and is focused
solely on cheese.
My mums meant to be retired, but shes still
down here every day bossing us around. Tats what
mothers are for, I suppose! he jokes. I really dont
mind. She just loves the cheese, and there wouldnt
be a business if it wasnt for all their hard work.
Hard work is certainly an essential ingredient in the
production of Golden Cenarth, not to mention high
levels of skill and expertise. Small 200-litre batches
of organic pasteurised milk from local farms are used
to make the curd, which is gently cut by hand and
ladled into small moulds. Each of these then has to be
manually turned upside down every few hours to help
drain the whey and form the cheese.
Its like baby-sitting, says Adams. If you go out
for the evening, you have to make sure youre back by
midnight to turn the cheeses, and if it means getting
up in the middle of the night, thats what we do.
Once out of the moulds, each individual cheese
is rubbed with organic sea salt not a quick job
when you consider that each batch produces 92
small cheeses.
However, what really makes Golden Cenarth
such a diva is its trademark lemon-coloured rind.
Tis is formed by a naturally occurring culture,
Brevibacterium linens, which colours the outside of
the cheese and helps develop its complex favours. Te
culture is present in the everyday fora of the cheese
room (Adams frst noticed the telltale tint on some
Caerphilly), but getting it to form on a semi-soft
cheese like Golden Cenarth is fraught with difculties.

cuisine and American ingredients, Michelin-starred
chef Thomas Keller is set to open an in-store
pop-up of his restaurant The French Laundry

D
espite the fact that he is
considered one of the worlds
best chefs, Tomas Keller is a
remarkably cool guy. He speaks
softly and thoughtfully, with an
unexpected modesty there are
no scripted answers, nor does he
show even the slightest hint of
celebrity-chef ego. Tough hed be forgiven if he did.
Keller is the man behind the triple-Michelin-starred
restaurant Te French Laundry, which Restaurant
magazine has named as Best Restaurant in the
Americas every year since 2003, and Best Restaurant
in the World in both 2003 and 2004. His culinary
achievements in the small town of Yountville,
California and beyond have been no mean feat.
Keller frst laid eyes on Te French Laundry back
in 1992, having left New York in search of a new
venture. Once an old steam laundry, it was then
operating as a restaurant run by the local mayor and
his wife. Keller had the idea to convert the rustic
two-storey building into the kind of place he had
always dreamed of, inspired by the many French
country restaurants that he had worked at as a young
apprentice. Now in its 17th year under Kellers
leadership, Te French Laundry continues to receive
great critical acclaim, delighting diners with dishes
that deliver a powerful explosion of favours.
Before his apprenticeships, as a teenager Keller
entertained ideas of being a major league baseball
player. It was only after spending a few summers
working in the kitchen at the Palm Beach Yacht
Club that he turned his attention to food. In 1997
he was in Rhode Island when he was spotted by the
master chef Roland Henin, who taught him the art of
classical French cooking and laid the foundations for
Kellers passion for French cuisine.
Although clearly in possession of a natural talent,
its rare that Keller takes credit for his success. Instead,
he emphasises the importance of his ingredients,
explaining that the way they are produced and how
they are afected seasonally often dictates the menu
at Te French Laundry. Te two major components
of good food are the ingredients and the execution,
he says. While ingredients on their own are easily
defnable, whats important is their quality and where
they come from. Keller champions the foragers,
fshermen and farmers, calling them the true
celebrities when it comes to food. Sourcing locally
is important too, though for Keller the calibre of the
ingredients is paramount. I still support fshermen
in Pennsylvania, even though thats miles away, but
thats because its about the quality, and not just about
a trend, he explains.
Indeed, one of the things Keller is most passionate
about is showcasing the quality of his ingredients
to a UK audience. Im excited about sharing our
dishes and our ingredients with our guests, he says.

from any other chef, but good food must be about
the ingredients too. Signature specialities such as
his oysters and pearls an innovative dish of pearl
tapioca with Island Creek oysters and white sturgeon
caviar will feature on the menu.
Many diners will also anticipate a taste of his
famous savoury cornets, a treat that is representative
of Kellers gastronomic panache, which turns a simple
idea like an ice-cream cone into a Michelin-starred
delicacy. Te French Laundry Cookbook details how to
recreate one of the cornets; those who dare will almost
always end up with singed fngertips, but its worth it
for a treat that evokes all the childhood joy of eating
an ice-cream on a summers day. According to Keller,
making a signature dish such as this is as much about
repetition as it is about skill. Being excited about
making the same dish over and over at a high level,
together with commitment and dedication, are the
benchmarks of being a great chef, he says.
It seems Keller has found the perfect recipe for
success. Shortly after opening Te French Laundry,
he launched Bouchon, a more informal bistro serving
French cuisine, just down the street joking at the
time that it was a place for him to go after a days
work. Bouchon Bakery opened next door a few
years later, followed by Per Se in New York, which
has also earned three Michelin stars making Keller
the only American-born chef to have been awarded
simultaneous three-star ratings for two diferent
restaurants. His more moderately priced restaurant
Ad Hoc opened in September 2006 in Yountville,
serving Kellers version of family-style comfort food.
Originally intended to be a temporary project, the
venture was such a success that Keller decided to
make it a permanent fxture.
While he says that its natural for him to enjoy his
own restaurants, Keller is also a big fan of some of
the UKs fnest chefs. Youve got to go see Fergus
Henderson St Johns is the one place I fnd myself
going back to again and again, he says. I also love
what Jason Athertons doing with the Pollen Street
Social and what Hestons doing at Dinner.
In Kellers opinion, whereas dining out was once
just a precursor to a play, concert or movie, eating
in a restaurant is now considered an event in itself.
Kellers focus on creating a good dining experience
lies at the heart of his cooking philosophy. Guests
are going to taste our food and, hopefully, enjoy
it. Tats what we want, he explains. Were not
coming to the UK to try to blow people away with
our techniques, we just want to produce and execute
our dishes at a high level, so that people can take
away a nice memory. H

Granted a Royal Charter by Queen Elizabeth I in 1600,

Italian oenophiles for decades.
More recently, however,
Prosecco has broken out of
Italy and gone global, faunting her charms for
wine connoisseurs the world over, letting them
discover her potential. No longer perceived simply as
Champagnes younger, simpler sister, Prosecco is at
last being appreciated in its own right, for precisely
what it is one of Italys fnest sparkling wines.
Few know more about the allure and, of course,

competitors. And the Ferrari California is the
closest the company has come to creating a
practical, everyday convertible supercar.
But then, if you want an everyday car, why buy
a Ferrari? Of course, practical means diferent
things to diferent drivers. If driving means spending
large amounts of time stuck in city trafc, buy a
Fiat 500 (theres even a Ferrari version, the Abarth
695 Tributo Ferrari). Or for travelling from Athens
to Barcelona as quickly and comfortably as possible,
there is always a Bentley or a Learjet. But if the
point is to enjoy the sensation and rewards of
actually driving, then it is hard to imagine a better
choice than a California for a weekend trip from
Calais to Paris to Epernay, the epicentre of the
Champagne region.
Te launch of the California in 2008 slightly
wrong-footed the motoring press. Many had
predicted that this was to be a baby Ferrari a
convertible that would be somehow softer than the
high-performance cars for which the company had
become rightly famed. A cruiser that was even
whisper it not designed just for men to drive.
Te California is, however, very much a real
Ferrari and it is far better looking in the fesh than
pictures suggest. On the road, although this is a
relatively big car, it doesnt feel like it. Te steering
is light but nicely weighted, visibility is excellent,
you can hold a conversation at 80mph with the roof
down and, if necessary, you can even get a couple
of very small children in the back. It is extremely
versatile and refned which is to be appreciated
when the itinerary requires a high-speed journey
from London to Paris on a Friday afternoon.
As expected, the car takes motorways and
autoroutes in its stride, but Paris trafc on an early
Friday evening creates a gridlock that would sorely
test many high-performance cars. Yet even here
the California doesnt miss a beat. Employing the
excellent sat-nav (not formerly a Ferrari strong
point), its possible to negotiate a path through the
furious Citrons and Peugeots to reach the relative
calm of the Eifel Tower.
From Paris it is easy to travel on autoroutes almost
all the way to Epernay. But with a little efort, it is
also possible to plan a route along some beautiful and
almost empty back streets and it is on these superb
roads that the California really distinguishes itself.
Select Sport mode, disengage the Auto setting,
and suddenly the cruiser becomes a very fast sports
car with performance, handling and soundtrack to
rival almost anything else on the road or circuit.
While the California is not as focused as the 458
Italia, its controls are perfectly balanced to provide
exactly the right level of feedback and a rewarding
sense of involvement.
Driving along the only street of a small rural
village, the complete absence of trafc makes
it seem essential to fick down a couple of gears
and accelerate hard. Te noise reverberating
of the stone walls of the houses is simply
staggering. In England we would probably have
been arrested immediately. But here a family
queuing at the boulangerie simply turns, smiles
and claps appreciatively.
It is this the sheer pleasure of the driving
experience that, when added to exemplary
levels of practicality, reliability, speed and
comfort, makes Ferrari California ownership
such a pleasure. Of course, you could happily
drive across France in more or less any modern
car. And you could quench your thirst with water.
Or you could drive to Epernay in a Ferrari and
drink vintage Champagne when you get there.
After all, a Ferrari California is to be used and
enjoyed as an accompaniment to a lifestyle that
includes only the very fnest things. H P

and fragrant cuisine, the Moroccan city

or centuries, the city of Marrakech has been a byword
for Moorish opulence. While it is just a short fight from
London, Marrakech remains rooted in its medieval past.
Sheltered at the foothills of the eternally snowcapped
Atlas Mountains, the city is a maze of alleyways and
Moorish architecture. Riads (traditional courtyard houses
or palaces) hide in the network of souks, many now
converted into hotels, with bedrooms leading of internal
courtyards decorated with intricate mosaics.
Recently, accommodation has been further transformed by the opening
of several luxury hotels. Te Royal Mansour was completed by command of
the king and ofers an indulgent experience that is authentically Moroccan.
Each suite is a walled riad, entered through a private courtyard that is
overlooked by a salon; above is a richly decorated bedroom, as exotic as
anything in Te Tousand and One Nights. Stairs lead up to a roof terrace
with an open log fre and plunge pool, from which guests can survey a
skyline framed by palm trees and minarets.
In June, Four Seasons opened its frst hotel in Marrakech, a contemporary
interpretation of Moorish architecture, set in 40 acres of gardens outside
the ramparts. Te new resort ofers a state-of-the-art spa and high-quality
service, making it a tranquil base from which to venture into the medina,
or old city. Tis tranquility is much needed before venturing into the
hurly-burly of the souks. More luxury hotels are scheduled to open shortly,
joining the established Amanjena with its spacious accommodation set in
an oasis of palms and olive trees overlooking a lake, and La Mamounia,
which recently underwent a restoration overseen by French designer
Jacques Garcia. Sir Winston Churchill was a regular visitor to
La Mamounia he described the hotel as the most lovely spot in
the whole world, and there is now a suite named after him.
Hot dining tickets include Dar Yacout, a candlelit restaurant set in
a medieval mansion, featuring mosaic foors, carved cedar ceilings and
water fountains. It is noted for its fragrant tagines try the lemon and
almond chicken and delicious desserts. Te citys restaurants face a
serious challenge from the hotels, though, notably La Mamounias new
Le Marocain restaurant. Situated in an opulent three-storey riad in the
hotels gardens, Le Marocain ofers an unbeatable combination of local
cuisine and live entertainment. Te Royal Mansours La Grande Table
Franaise, overseen by three-Michelin-starred chef Yannick Allno,
is being hailed as the best French restaurant in Africa; the menu
features modern interpretations of French classics using locally sourced
ingredients. For Moroccan country cooking try Amanjena, which also
has an excellent Tai restaurant.
Te coolest clubs are Pacha and B-Zin, though no better nightlife may
be found than in Djemaa el-Fna square, where fre-eaters, snake charmers,
musicians and storytellers entertain the crowds in a city that never sleeps
except perhaps in the midday heat. Rise early and marvel at the sights
from a hot-air balloon. Or ride horses up to the waterfalls of the Atlas
Mountains or through the Palmeraie, where walled villa estates and chic
boutique hotels are set amid the tranquility of the palm trees, surrounded
by the scents of bougainvillea and orange blossom. H

If James Bond were to decide that an alligator jacket
in an understated shade of mushroom were the very
thing in which to leap from a burning building or
scale an impossibly narrow crane, then his frst port
of call would be Brioni. Tis traditional Italian
tailoring brand has been behind the sartorial
successes of all the more recent Bonds. And before
that, even greater style icons from Clark Gable
to Rock Hudson and Gary Cooper recognised
the intrinsic allure of a hand-sewn tux. Such
craftsmanship, however, takes time. Brioni has been
perfecting custom tailoring since 1945. At the same
time that Christian Dior was scandalising the
fashion world with the New Look in Paris, master
tailor Nazareno Fonticoli and designer Gaetano
Savini were developing their Roman style a
reinvention of luxury dressing for men. Today, all of
the traditional craftsmanship remains. It still takes at
least 18 hours over a two-month period to construct
a single suit (including 184 pressings), courtesy of
the companys 900 tailors. And the resulting suits,
tuxedos and, indeed, leather jackets are as elegantly
