THE HOOD SUPERVISOR this controller is also a component of the new UV control system. It is used to measure the exhaust airflow in a real time (integrated differential pressure transducer), to monitor the Infrared sensor and the plenum temperature sensor. It controls also the damper position.

Exhaust regulation principle


01 KITCHEN STARTING UP (typically 08.00 am) => Cooking appliances are off, fan is off => Marvel is on stand-by mode, damper are totally open => The user starts the fan => The system starts, dampers & fan go to minimum position (unless there is a minimum airflow setup specified)

02 WARMING UP OF THE COOKING APPLIANCES => Cooking appliances are on, without cooking operations => Dampers & fan go to idle position => Infrared sensors measure changes in cooking temperature surface to detect instantaneously cooking mode

FIRST STEP: Find the running max point

01 FIND THE MAX RUNNING POINT => All dampers are totally open => Fan is at the maximum speed => Calculator enters in calibration and orders supervisors to set the dampers at their max airflow => Speed of the fan is decreased progressively until one of the dampers is open at 90%

SECOND STEP: Find the running min point

02 FIND THE MIN RUNNING POINT Dampers are on their max airflow position => Fan is at the max running point => Calculator orders supervisors to set the dampers at their min airflow => Speed of the fan is decreased progressively until one of the dampers is open at 90%

Generic DCV
Competitive DCV systems use exhaust air temperature to maintain exhaust airflow and beam sensors to detect cooking. Advantage: Generic system that can be used with any hood or cooking appliance Disadvantage: Inaccuracy. When multiple appliances under the hood, cooking on one of the appliances calls for maximum hood exhaust airflow. Arbitrary exhaust air temperature setting usually causing heat spilled into the kitchen

Benefits of Demand Control Ventilation


Energy saving up to 50% Exhaust hood system is automatically commissioned and balanced. Hoods will automatically start when appliances are switched on and stop as soon as cooking appliances cool down. Manual or on schedule start/stop is also available. Exhaust fan is controlled to maintain minimum static pressure to minimize energy consumption. System automatically detects and send warning signal if exhaust hood is operated without a filer or filters are clogged and need to be cleaned If exhaust temperature approaches dangerously high level system automatically reacts by increasing exhaust airflow and warns the operator before fire suppression system is engaged.
