t requires special skills to master the Balinese performance art of bondres. Performers are expected to have the ability to dance, act, sing and play a

household problems, education, the economy, religion and politics. In bondres, the discussion of these topics is done in the form of witty jokes. It can be said that bondres serves to balance out the seriousness of what is being discussed. Bondres has become an integral part of Calonarang performances as well as the Topeng Pajegan Dance, Panca Dance and Prembon Dance. Unlike other Balinese dances, bondres does not require xed or special movements. Performers are free to express themselves as they wish, which includes making their own masks to suit their characters.

Balinese musical instrument called the tabuh. On top of this they need to be able to spontaneously come up with hilarious jokes that can get audiences not only laughing but also thinking about the issues being discussed in the skits. Bondres literally means jokes made by Balinese masked dancers when they perform on stage. The word can also be used to refer to the funny types of Balinese masks used during comedic performances.

EVERYDAY PEOPLE
All funny characters can be called bondres, said I Nyoman Catra, a lecturer at the Indonesian Institute of Arts (ISI) Denpasar. He explained that bondres characters are like ordinary people with their daily routines. They discuss a variety of topics such as personal and

nose only. The process of making bondres masks is not as complicated or sacred as the process for making Rangda or Barong masks, but it still requires an auspicious day. Each mask is said to be lled with a special energy to help the pregina (dancer) achieve taksu (an inner energy that draws audiences

into the meaning of the dance). In addition to the mask, another factor contributing to the success of the bondres performance is the situation, condition and time, known as the concept of desa, kala, patra in Balinese-Hindu philosophy. When we perform bondres, we are not only entertaining the

audience, but also the ancestors and gods who guard the area where the dance is performed. That is why before the performance we always pray and hope for the play to go well, explained Catra, who has performed bondres since 1978. bondres players make. But the amount of laughter coming from the audience is not the primary measure of the success. Dirty, vulgar or even insulting words exchanged between performers may make audiences crack up but it can also prevent the play from being successful. Nyoman Catra emphasized the importance of inserting moral messages so that audiences can learn and have something to ruminate on later. fascinating fruit with our own eyes, we are honestly surprised that no other chocolatier in the world had thought to use this name and logo. It was during our visit to Pod Chocolate Factory & Caf last month that we rst saw this fruit, hanging from the trunks and branches of cocoa trees in the serene village of Carang Sari.
The combinations are entirely up to you! Sprinkle toppings randomly, go for a specic fruit and nut combo or ll the majority of the tray with your no.1 favorite topping only. You can decorate your chocolate with a wide selection of nuts, dried fruit and sprinkles. We loved the dried cranberries and roasted almonds.

TAKING THE TOUR


We had been eager to take the tour for many months, so when we nally found a day that worked with both our schedule and the schedule

of chocolatier Toby Garritt, we excitedly packed up our gear and embarked on the two hour journey from our ofce in Kuta to the lush grounds of the Bali Elephant Camp & Ayung River Rafting.

Due to its location, tours of Pod Chocolate can be combined with elephant trekking and white water rafting for a full days worth of fun activities. However, we elected to focus specically on the chocolate.

The Pod Chocolate Fun Factory Tour & Chocolate Making gives you insight into the chocolate making process. Starting out as a delicate cacao ower and later on growing into fruit that is harvested, fermented and dried in the sun, you can see the beginnings of chocolate with your own eyes. Youll also learn how Pod Chocolate is supporting local organic farms. You can eat the white meat of the fruit, which has a texture and avor reminiscent of soursop. Pod Chocolate co-founder Toby (who has lived in Bali for over a decade) admitted that it was this amazing fruit that compelled him to get into the chocolate making business.

The alfresco caf sits right outside of the factory, so you can watch the chocolate makers at work through the large windows. It is a quiet and pleasant place to relax, with cushioned stools and an assortment of magazines to ip through.

SPOTTED: COLLABORATIONS
Lately weve noticed Pod Chocolate making appearances all over Bali from the dessert menu of Fire at the W Resort & Spa Bali to the recent grand opening of Salt Tapas restaurant at the Sentosa Seminyak (there were bite-sized Pod Chocolate churros!). It looks like the restaurants on the island are catching on to the

After seeing how the cocoa pods are grown and harvested, youll get to see the grinding and conching processes, as well as tempering on a granite slab (see our diagram on page 31). The tour also includes the chance to make your own chocolate, and being at the Bali Elephant Camp, what better shape to make than an elephant? Create your own delicious herd of chocolate elephants and be prepared to get messy! Aside from your chocolate creations, youll also get to take home a Certicate of Chocolatiership. One example is their Night Safari, which we shared with our readers in our April edition. In this edition, we return to the Safari Park to experience dinner at Tsavo Lion Restaurant, where

You get the feeling of safari straight away, especially after reading the story behind the name Tsavo. Displayed near the faux replace,

Two mane-less male lions from the Tsavo River in Kenya dragged railroad builders and workers out of their tents in the middle of the night and devoured them. To end this, the lions unfortunately had to be hunted down and shot. Guests of Tsavo Lion Restaurant need not worry about getting devoured because the protection of glass windows. A man-made stream also stands between the windows and the lions stomping grounds. All the diners need to worry about is devouring the meal ahead of them!

From these tables guests have a direct view of the lions perched on rocks or wandering around the path where the Night Safari vehicle goes by every half hour or so. From where I sat, I could see a pretty lioness looking intently at every passing Night Safari group. With the sound of bells she was on her feet, almost as if it she wanted to personally greet them. However, she did not seem very interested in the meaty treats that the handlers offered through the bars of the specially designed vehicle. Unlike a petting zoo, it is not safe to touch or take photos with the lions and lionesses at the Safari Park. Guests must make sure to keep their hands in the vehicle at all times. when you get a bit of everything in with each bite of sirloin. If youre wondering about how your children will manage with something like a rolled-up parcel sirloin, fear not. A kids menu is also available, featuring easy-to-eat favorites such as chicken nuggets, potato gnocchi with cream sauce, mini-burgers, and sides of steamed vegetables or French fries.

Sitting within the grounds of the family-friendly Bali Dynasty Resort in Kuta, this watering hole offers an authentic and classic Irish cottage pub atmosphere with dark wooden panels, plush armchairs and stained glass windows. Frequented mostly by foreigners living on the island and visitors of the hotel, the pub lends feelings of warmth and familiarity when you walk in. Live bands perform every night, but that is not the only kind of entertainment there. There are also two medium-sized pool tables and a dartboard for you to use to your hearts content, as well as a working vintage jukebox playing catchy tunes. For your lunch at Gracie Kellys, I would suggest the Cheesy Shepherds Pie, which is moreish minced lamb cooked in gravy with green peas, topped with creamy mashed

ANOM DARSANA SHARES HIS THOUGHTS ON JAZZ AND SUPPORTING THE LOCAL MUSIC SCENE.

BB: If you could have any jazz legend play at the next UVJF, who would it be? AD: Keith Jarrett BB: Youve worked as a sound engineer for many years, including 14 years in Switzerland. Who has been the most exciting artist to work

Bali & Beyond (BB): What motivated you to organize the Ubud Village Jazz Festival? Anom Darsana (AD): I used to have an art center in Denpasar called Serambi Arts Antida where a lot of local artists and people from the music community gathered. I held a monthly Jazz Rendezvous there with the help of one of Balis prominent Jazz artists, Yuri Mahatma. After the center closed down, Yuri and I decided we wanted to continue the Jazz Rendezvous and Ubud felt like the perfect place for it. Thats how the Ubud Village Jazz Festival (UVJF) came to be.

AD: We didnt really meet any big obstacles in preparing for UVJF, as our team started to organize everything one year prior. Also, my experience working in international festivals like the Bali Spirit Festival, Ubud Writers Festival and various festivals in Switzerland helped me a lot in organizing this event. BB: We hear that lots of jazz performers come to Indonesia to perform (whether at Java Jazz Festival or other festivals) and fall in love with the crowd. What is it about jazz lovers here that you think resonates with them?

AD: There are so many great jazz musicians here in Bali; Ive worked with Yuri Mahatma, Rio Sidik Quartet, Ito Kurdhi, Astrid Sulaiman, and Balawan. As for international artists, Ive had the opportunity to work with Diana Krall, but that wasnt in Bali, it was in Geneva. In the future Id like to engineer the sound for Erik Truffaz from Switzerland. BB: Any thoughts on the live music scene in Bali? AD: I think theres a severe lacking

AD: I think there are some factors BB: Tell us about the demographic of UVJF? AD: Our rst ever UVJF was held in July 2013 and was a big success despite the rather unfavorable weather. About 1,500 people of all ages came to the event. So really, this festival is for all music lovers. BB: What was the hardest thing about preparing for the rst UVJF? aside from the enthusiastic crowd that make jazz performers from outside Indonesia fall in love, for example, the Indonesian atmosphere is so different to Europe and other western countries. Many artists that performed at UVJF were dazzled by Ubud as well as the warm and welcoming people. There were even some who didnt want to go back home because of how much they loved it.

in the live music scene in Bali and very few places where music and art communities can gather and be creative without being hassled by expensive costs. This is why I called Antida Sound Garden. The idea behind opening up this venue is to accommodate local artists and musicians so that they can develop their creativity freely. There are so many talented musicians here that need space to show their art.

The lobbys ocean view is actually one of the rst things that guests see at the top of the escalator, instead of the check-in area, which interestingly enough is tucked away in an opposite corner. This layout might be counterintuitive to some but it is completely intentional, as the Sheraton Kuta wants rst and foremost to greet its guests with a refreshing view after their journey.

The elegance here is understated, and Balinese accents have been incorporated but there is a bit of playfulness to the design. Some examples include the exhibitionist tub that can be seen from the bedroom or the surprising splashes of hot pink in the interior of their all-day dining option Feast. The Kuta area has always been laid-back and fun, so these kinds of accents make sense when you think about the neighborhood the resort is in. Another nice thing about Kuta is its central location. We think the Sheraton has the words meetings

and get-togethers written all over it. From their vast open-air lobby area to the social courtyard to the nine event spaces and ballroom, it practically begs you to bring a group whether friends, colleagues or your family. This atmosphere of togetherness also extends to their dining options.

DHYANA PURA AT NIGHT CAN BE A BIT OVERWHELMING TO SOME, BUT FOR OTHERS ITS A FUN AND STIMULATING SCENE. PEDESTRIANS WILL FIND THAT THE SOUNDS ARE SIMILAR TO LEGIAN BUT THE SIGHTS THERE ARE DEFINITELY OF A DIFFERENT KIND!

o me, this string of clubs is such a refreshing sight. Walking down the street you can hear the thumping bass and

is welcome here. There are ve clubs sitting side by side with open windows and doors that make it very easy for people to go in and out as they please. By standing in a strategic spot on the pavement, youll be able to see whats going down at each place. Mixwell might be doing a drag show at the same time that Bali Joe has go-go dancers shaking their groove thing on a stage. Party people dance both inside and outside of the packed venues. Its a rare scene that you might not nd in many places outside of Bali. Dhyana Pura is always a fun place for me to visit. As a man who enjoys this kind of scene and has lived in Jakarta where venues like these are usually hidden within malls or ofce blocks, its nice to see it all out in the open. The parties at Dhyana Pura would be pretty much frowned upon in the capital (to say the least), while in Bali it is a noisy and carefree environment, plus you get the added bonus of a fresh breeze (the location is just a stones

throw away from the iconic Double Six Beach). Yet I still feel that theres something missing. It sometimes gets monotonous, so I believe that these clubs could denitely benet from some more varied kinds of entertainment. Perhaps something along the lines of stand-up comedy, or even drag karaoke. Other than that, I do believe that Dhyana Puras scene is pretty much up to par with its cousins in other countries. For those who are really not into this kind of scene, do not fret. Theres another personal favorite hang out of mine just down the street that I think is no less fun and entertaining. Maria Magdalena sits right at the beginning of the street on your right hand side a venue frequented by mostly the expats living on the island. They are open until super late and often host underground artists and musicians that are no less, or maybe even crazier, than their neighbors down the street. By Miko Harada

Some of you might already be aware of whats really going on there, but for those of you who arent, heres a clue for you: masculine looking calves and feet jammed into sky-high platform heels, paired with fake eyelashes and feather boas, are not a rare sight here. Dhyana Pura is pretty quiet during the day and up until early evening, but when the clock hits 10 p.m. the crowds start to gather, the music gets turned up high, and the drag queens come out of their slumber. Although these small clubs are frequented mostly by men of, shall we say, a different persuasion, everyone

To start off my thrill-fest, I headed for the Super Bowl. Speeding fast down this waterslide, I was launched into a big bowl that kept me spinning high on its wall for several exhilarating

turns before nally plunging into a pool at the bottom. Afterwards I climbed up the stairs to the Boomerang. This particular waterslide was my favorite, as it sent me speeding down a steep slope on an inatable tube, climbing 60 degrees up and then pulling me backwards towards the bottom. What a rush! Next up, I headed up to a waterslide tower with six slides of

different thrill levels. The Smash Down is the highest and fastest slide in Waterbom, towering 25 meters above ground. When I reached the top of the almost vertigo-inducing height, the instructor gave me pointers on the proper way to go down the tubeless ride. The slide sent me accelerating down the pipe at up to 70 km per hour and for a moment it felt like I had left my heart at the top of the ride.

Another heart-stopping slide is the Climax. Entering a small chamber set 19 meters above ground and covered with transparent Perspex glass, the worst part about this ride is standing on the trapdoor and the anticipation as you wait for the trapdoor to open. As I took a sharp dip and looped around in the pipe, it felt crazy yet amazing. However, I honestly wasnt crazy enough to

have another go. Further up on the same tower is the most thrilling ride of all, the Pipeline. Its the second highest ride in the water park and sent me down the weaving 150 meter tube in just 12 seconds!

When you need a break from the adrenaline rush, the Lazy River will

be waiting for you. The most relaxing ride of all, it sends you oating around under the cool shade of the tropical gardens and feels great with the fresh breeze blowing through. And the Lazy River isnt the only thing at Waterbom that offers a relaxing time. Lounge around the sunbathing area near the Pleasure Pool and work on your tan, sip a cocktail at their swim-up Splash Bar, or take a dip to cool down every so often. You can also properly unwind at the massage parlor where foot, back and shoulder massages are available, as well as sh spa treatment. If youre not crazy about being

in the sun all day long, I suggest booking a gazebo prior to your visit. It is perfect for groups of friends or families, and if you have small children, gazebos are also available near the Funtastic kiddy play area. Waterbom also has several eateries such as The Wantilan Restaurant, The Shack, and various food stalls that are ready to serve you when you get the munchies. I personally enjoyed The Shack for their great food menu, delicious smoothies and laidback tunes. All in all, Waterbom Bali is a great place

MADURA HAS PLENTY OF GREAT THINGS TO SEE, WITH OX RACING BEING ONE OF THE MOST EXCITING FORMS OF ENTERTAINMENT IN THE AREA. HELD ANNUALLY FROM AUGUST TO OCTOBER, YOU STILL HAVE A CHANCE TO CATCH THIS YEARS RACES!

There are two ways to access the island; you can cross the newly built Suramadu Bridge from Surabaya or take a 3.5 hour ferry ride from

But what Madura is really known for is their ox racing, called karapan sapi.

MIGHTY BULLS
Incorporating Maduras tough and hardy breed of oxen, karapan sapi is a prestigious event for the Madurese. Starting off in villages throughout Madura, the competition culminates in Pamekasan during the months of September and October, where contestants compete for the

Presidential Cup. Winning this prestigious event brings great honor upon the oxen owner and his or her village. Often times the prestige can raise the owners social status and the bull will be treated like a king, not only by the owner but also by the whole village. Theres even a saying that says the Madurese men treat their bulls better than their wives!

READY, STEADY
When the rst contestants readied themselves at the starting line, things went very quiet. Then as the agman raised his ag, the bulls charged furiously down the dry and dusty track dragging the sled and the jockey with them. The crowd roared with excitement and speakers blared with the MCs enthusiastic commentary, shouted out in Madurese. The 600 kg oxen run madly, reaching speeds of up to 50 kph as the daredevil jockeys stand on their sleds. Holding onto the yoke, they do their best to control the direction of the charging bulls. The winner of

part of the island in Sumenep, and had to ask around a bit. When I nally got a tip-off, I made my way to another village in the Ambunten sub-district, arriving before noon the next day. Despite the scorching hot sun that day, people swarmed the open eld where the race was being held. The dirt track was fairly wide and about one hundred meters in length, with a brick wall at the end of the track. On

the race is the rst ox to reach the nish line.

RISKY SPECTACLE
Its not rare for the oxen to run in unintended directions, so coming to one of these races as a spectator involves a certain degree of risk. What makes watching this particular race even more dangerous is the fact that unlike automobiles, there arent any brakes on the sleds. Hence the brick wall at the end of the track, positioned several meters away from the nish line. Daredevil acts arent displayed solely by the jockeys, as the spectators get just as crazy. Some stand at the nish line and burst into spontaneous helter-skelter behavior, either trying to slow down the charging bulls or running away. I got brave enough myself to stand near the nish line and it denitely got my adrenaline pumping. I was lucky to be able to dodge the speeding oxen, running away carrying my camera and tripod.

After the adrenaline-lled race I came back to Sumenep and toured the historically rich albeit sleepy town. The sights worth visiting include the historical buildings such as the kraton palace of Panembahan

Sumolo built in 1762 and a mosque built around the same time called Masjid Jamik. Besides these historical spots, Maduras villages are quite interesting to explore as well. The island is sparsely populated

with a peaceful and slow-paced lifestyle, the people are warm and welcoming, and their unique traditional high-roofed houses are a beautiful thing to behold. I also suggest a visit to the coastal area, as there you will nd beaches that might turn out to be the most pristine youve ever encountered. The Madurese are also known for being reputable shermen who use vibrantly colored wooden boats these boats in the Jimbaran area

NICE RIDE
Hundreds of participants along with a total of about 50 cars took part in the Ferrari Bali Rally 2013. Held from September 6 to 8, the 2nd annual driving event was organized by the Ferrari Jakarta team and is one of the most awaited events for Ferrari owners in Indonesia. Models such as the 599 GTO, 599 GTB, 458 Italia, 458 Spider, FF, 612 Scaglietti, 575 M, California, F430, F430 Spider, 430 Scuderia and 360 Modena were spotted on the tour, which began with an afternoon drive from St. Regis and ended at Potato Head Beach Club via the new highway. On the second day, the tour started at 8 a.m. with a morning drive to Tanah Lot, then continued to Ubud and ended with dinner at Sundara restaurant in Jimbaran. The Ferrari Owners Club Indonesia also made a donation of Rp. 200,000,000 to Yayasan Kemala Bayangkari to aid in the support of disabled children.

BEAUTY WITH A PURPOSE


The gorgeous contestants of Miss World 2013 converged on the island of the gods during the month of September. These ladies hailed from 129 different countries and had a fun-lled month of activities that included the release of baby turtles into the sea, a golf tournament and fashion shoot at the Pan Pacic Nirwana Bali Resort, animal encounters with Indonesian wildlife at the Bali Safari & Marine Park, a visit to the sacred Besakih temple, and various other activities amidst Challenge Events and rehearsals for the opening ceremony and the nal show. The end of the opening ceremony (held at Mangupura Hall of the Westin Hotel Nusa Dua) saw all the contestants dressed in vibrant traditional attire from all corners of the Indonesian archipelago. At press time the government had ofcially announced that the nal would also take place in Bali, undoubtedly poised to be another colorful and festive affair. Call an ambulance by dialing 118, but it is a lot more practical and quicker to hire a taxi. Most hotels have on-call doctors on standby. For Bali Belly, Lomotil and Imodium eliminate symptoms, but not gastro-related infections. A fever along with symptoms requires doctor-prescribed antibiotics. Drink as much liquid as possible. Isotonic drinks under various brand names are widely available and are known to replenish body hydration and replace uids. For discomfort, diarrhea and cramping, drink strong, hot tea; avoid fruits and spicy foods. Some day-biting mosquitoes carry dengue fever, but this is not a problem in tourist areas. Bali is non-malarial and prophylaxis is not required. Mosquito bites, cuts or abrasions easily become infected in the tropics. Treat them immediately. Drink only bottled or boiled water. Peel fruit before eating; avoid raw vegetables except at reputable restaurants. Ice in restaurants is safe. Protect yourself from the intense equatorial sun. Use high SPF sunblock and a hat. AIDS and sexually transmitted diseases are increasing in Indonesia. Local sex workers have multiple partners from around the world. They are not checked for sexually transmitted diseases. Act responsibly and use condoms, available over the counter at pharmacies.
