Presentacin
Todas las obras deben ser fruto de una experiencia, de un conocimiento y de una reflexin. En esta ocasin el lector tiene en sus manos
un libro que rene los tres requisitos apuntados. Adems tiene como
mrito que ha sido elaborado para servir a un profesional que hace de
su quehacer diario un arte: el enlogo.
Con el inters, por consiguiente, que fuera til en la bodega, este libro
posee la ventaja de haber sido escrito por un enlogo que ha prestado
servicio a un buen nmero de bodegas, que ha vivido vendimias y
vinificaciones, y conocido la utilidad del control analtico sobre un
producto en periodo de evolucin.

Una obra como esta, no se escribe sin un buen bagaje de conocimientos. El autor que ha desarrollado sus conocimientos como tcnico
analista durante muchos aos, en una Estacin de Viticultura y
Enologa, concretamente en la de Vilafranca del Peneds, es claro
ejemplo del servicio que estas instituciones, repartidas por todo el
territorio espaol, ofrecen al sector vitivincola.
En las Estaciones Enolgicas la funcin de los tcnicos, como el
autor, no se circunscribe tan solo en realizar su trabajo de analista,
debe tambin ejercer otras funciones: estar debidamente informado de
las novedades analticas, de los problemas que vive el sector y de sus
posibles soluciones, transmitir la informacin a la institucin, colaborar
en los proyectos de investigacin o experimentacin y tambin, en la
medida de lo posible, crear escuela.
