APPLE RINGS

SCALLOPED

Core large apples
3 Tbsp. butter, and a little
bacon fat
1/3 cup brown sugar
1/2 tsp. cinnamon and nutmeg
2 Tbsp. water
Cut apples 1/4 inch thick
rounds. Heat water and grease
in large frying pan on moderate
heat. Saut apple rings until
they start to soften. Sprinkle
in brown sugar, cinnamon and
nutmeg, and continue to cook 5
to 7 minutes. Spoon syrup over
apples until tender and coated
with juice. Good with ham.

1 box Jiffy cornbread mix


1 can whole-kernel corn with
liquid
1 can creamed corn
8 oz. butter or margarine
melted
8 oz. sour cream
2 eggs, lightly beaten
12 oz. shredded cheddar
cheese
Setting aside half the
shredded cheese, mix the
remainder of the ingredients in
a large bowl. Pour mixture in
to 9x13 pan. Bake at 350 for
1 hour. Remove from oven and
sprinkle on cheese. Place back
in oven until cheese is melted.

SANDWICHES

6 cup cooked and shredded
turkey or chicken
1 cup celery, chopped
1 cup onion, chopped
1 Tbsp. butter
1 can cream of mushroom
soup
1 cup mayonnaise
2 cup shredded cheese
Saut onion and celery in
butter. Add cooked meat, soup,
mayo, and cheese. Stir. This
works well in a crock pot.

1/2 tsp. baking powder
1 tsp. salt
Combine all ingredients;
stir, mix, and knead. Shape
dough into patties and fry in
hot shortening until golden
brown; drain. Shortening
should be at least one inch
deep in skillet.

3/4 cup brown sugar
1/2 cup buttermilk
1/3 cup oil
1/2 tsp. baking soda
1 cup rhubarb, diced
1 egg, beaten
1 tsp. vanilla
2 cups flour
1/2 tsp. salt
1/2 cup nuts, chopped
Topping:
1/4 cup brown sugar
1/2 tsp. cinnamon
1/4 cup nuts, chopped
Combine
brown
sugar,
buttermilk, oil, egg, and
vanilla. Mix well. Combine
dry ingredients and add to
brown sugar mixture. Spoon
in to muffin cups and sprinkle
topping on muffins. Bake for
20 minutes at 375. Makes 12
muffins.

1 chocolate cake mix
1 instant chocolate pudding mix
1 cup sour cream
4 eggs
1 cup oil
1/2 cup warm water
2 cups chocolate chips
Combine cake mix, pudding
mix, sour cream, eggs, oil, and
water, mixing well with mixer.
Fold in chocolate chips. Pour
batter in to well-greased Bundt
pan. Bake at 350 for 50-55
minutes. Test with toothpick.
Cool in pan 1-1/2 hours.

CHICKEN
CASSEROLE

3 cups cooked noodles
1 can (10.5 oz.) condensed
cream of chicken soup
1/3 cup sour cream
1/3 cup milk
1 Tbsp. pimento
1 Tbsp. parsley
1/3 cup chopped celery
1-1/2 cups diced chicken
buttered breadcrumbs
Combine cooked noodles,
soup, sour cream, milk,
pimento, parsley, and celery in
pan, heating thoroughly. Add
in diced chicken, and place in
a greased half-quart casserole
dish, topping with breadcrumbs.
Bake 30 minutes at 375.

1 lb. loose pork sausage


1-1/2 cups packed brown sugar
1-1/2 cups white sugar
2 eggs, lightly beaten
3 cups flour
1 tsp. ginger
1 tsp. pumpkin pie spice
1 tsp. baking powder
1 tsp. baking soda
1 cup cold, strong coffee
1 cup raisins
1 cup nuts
Combine sausage, brown sugar,
and white sugar and beat well with
mixer. Add eggs to mixture and beat
well. In separate bowl, sift together
flour, ginger, pumpkin pie spice, baking
powder, and baking soda. Add flour
mix alternately with coffee to sausage
mixture. In separate bowl, pour boiling
water over raisins and let stand five
minutes, drain and pat dry. Fold raisins
and nuts into mixture. Bake at 350 for
1 to 1-1/2 hours in a well-greased and
floured Bundt pan. To store, wrap in
plastic wrap and place in refrigerator.

MISSISSIPPI MUD
CAKE BROWNIES

Brownies:
1 cup melted butter (or 1 stick)
2 cups sugar
1/2 cup unsweetened cocoa
4 large eggs, beaten
1 tsp. vanilla
1/8 tsp. salt
1-1/2 cups flour
1-1/2 cups chopped pecans
1 10.5 oz. bag miniature marshmallows
Frosting:
1 16 oz. package powdered sugar
1/2 cup milk
1/4 cup butter, soft
1/3 cup unsweetened cocoa
Beat with mixer
Wisk melted butter, sugar, cocoa, eggs,
vanilla, and salt in large bowl. Stir in flour
and nuts. Pour batter in to a greased and
floured 15x10 jelly pan. Bake at 350 for 20
minutes or until wood toothpick in center
comes out clean. Remove from oven and
top with marshmallows. Return to oven for
5 minutes. Drizzle frosting over warm cake.

Leaving cookies and milk


for Santa Claus is a Christmas
Eve tradition. Children regularly
place a dish of cookies and a
glass of milk by the tree on
Christmas Eve so that Santa
has enough energy to complete
all of his gift-giving before kids
wake up on Christmas morning.
The
tradition
of
leaving
cookies out on Christmas
Eve may trace its origins to
Saint Nicholas. On the feast
of St. Nicholas on December
6, children would leave food
and drink for the saint and any
attendants. The treats would
be exchanged for gifts. While
thats one theory behind the
tradition, others think it is linked
to the history of the Christmas
tree and the edible decorations
that adorn it. Santa would
snack on the ornaments. Even
after edible decorations gave
way to inedible ornaments, the
tradition of leaving a snack for
Santa remained. Whatever the
origins behind the tradition,
millions of children dutifully

leave milk and cookies for


Santa on Christmas Eve.
Mantles adorned with
garland and other holiday
trinkets make fireplaces come
alive for Christmas. That magic
is only enhanced by hanging
Christmas stockings, which
are just waiting to be filled
with goodies for good girls
and boys. Those without a
fireplace often hang stockings
from windowsills and stairway
banisters.
No written record exists to
explain the origin of hanging
stockings on fireplace mantles.
Despite this, many people link
the tradition to a tale about St.
Nicholas. As that story goes,
St. Nicholas was traveling
through a village when he
overheard the plight of three
women. They were poor, and
their father could not afford an
ample dowry to marry them off.
Rather than have them end up
spinsters, St. Nicholas secretly
tossed bags of coins through a
window (or down the chimney,
depending on which version of

the story you read or hear), and


they were captured in the girls
stockings hanging to dry by the
fire. The family was overjoyed
to have received such riches.
Soon news traveled about the
mysterious money in stockings,
and other children left out
stockings for St. Nicholas to
capture their own gifts.
The tradition has transformed
over the years, and now many
children hang stockings by the
chimney with the expectation
that the stockings will be
filled with gifts from Santa.
Traditions once suggested
that only gifts from Santa were
left in stockings, while gifts
placed beneath the tree were
from family, but that has since
changed. Stockings are now
meant to hold small gifts while
larger items are placed under
the tree.
Stockings should be hung
away from the flames of the
fire as a safety precaution.
Some children even like to
hang individual stockings on
their bedposts instead of on a
fireplace mantle.

Harpers Ferry will again be
abuzz with holiday events this
season, starting with a Chili
Potluck Supper and Christmas
Train viewing Tuesday, December 8.
The Harpers Ferry Area Heritage Society will host the event
at the American Legion Hall
beginning with social time and
snacks at 5 p.m. Then, from
5:45 to 6 p.m. anyone wishing to do so may go and view
the Christmas Train make its
way through Harpers Ferry.
Finally, the Chili and Potluck
Supper will begin at 6:15 p.m.
back in the Legion Hall. Chili
will be provided, but attendees
are asked to bring a side dish,
snack, or dessert.

by attending the Open House
at the Harpers Ferry Library

Prepare mufn mix according
to directions, and place half
in pan. Pour hamburger mix,

1/2 cup packed brown sugar
2 Tbsp. water
1 box white cake mix
1 cup nely crushed corn
akes
1-1/2 cup any jam or preserves

Cream margarine and brown


sugar well. Add water, cake
mix, and crushed corn akes.
Set aside 1-1/2 cups mix for
topping. Press rest in to 9x13
greased pan. Carefully spread
jam or preserves on crust.
Use teaspoon to drop on the
reserved mix of topping. Gently
press it down. Bake at 350
for 30 minutes, or until golden
brown.

3/4 cup water
1/2 cup oil
4 eggs
1 German Chocolate cake mix
2 Tbsp. flour
1 can coconut pecan frosting
Mix water, oil, and eggs well.
Add cake mix and two heaping
tablespoons of flour, beat with
mixer for one minute. Add
frosting, beat one minute. Pour
in to greased Bundt pan and
bake at 350 for 50-60 minutes.

2 cans Great Northern Beans
1 can white corn
1 envelope white chili mix
1 can green chilies
1 can cream of chicken soup
1 can chicken broth
1/2 cup sour cream
cheese
Place chicken in crock pot.
Top with beans, corn, chili mix,
chilies, soup, and broth. Cook
8-10 hours.

1 can (14 oz.) sweetened
condensed milk
2 eggs
1 Tbsp. pumpkin pie spice
1 tsp. vanilla
1 deep dish pie crust

Mix pumpkin and condensed


milk in large bowl until smooth.
Mix in eggs, pumpkin pie spice,
and vanilla. Pour in to pie crust.
Bake 15 minutes at 425,
turning oven down to 350 for
40 minutes.

2 cups fresh or frozen
blueberries (or any other
berries)
1 tsp. cinnamon
1 tsp. lemon juice
1 cup flour
3/4 cup sugar
1 tsp. baking powder
1/2 cup milk
3 Tbsp. butter or margarine,
melted
Topping:
3/4 cup sugar
1 Tbsp. cornstarch
1 cup boiling water

Toss berries with cinnamon


and lemon juice, place in
8-inch square baking dish. In
bowl combine flour, sugar, and
baking powder, stir in milk and
butter. Spoon over berries.
Topping: combine sugar and
corn starch and pour over
batter, slowly pour boiling water
over all. Bake 350 for 45-50
minutes or until cake is done.
I put 3 Tbsp. minute tapioca
on the berries and omit the
cornstarch.

2 eggs
1-1/2 cups flour
1 cup sugar
1/2 tsp. salt
1/2 tsp. baking soda
Beat margarine, bananas,
and eggs together. Sift flour,
sugar, salt, and baking soda
together, adding to batter
quickly. Bake in loaf pan at
350 for 40-50 minutes. Makes
one large loaf.

bowl mix pudding and milk,
chill until set. Fold in Cool Whip
after pudding is set. Add cream

1 cup shredded cheddar
cheese
1 cup diced cooked ham
1 cup shredded mozzarella
cheese
1/2 cup milk
8 eggs, beaten
1/4 tsp. salt
1/4 tsp. pepper
Press potatoes in 9x13 pan,
drizzle butter over potatoes.
Bake 450 for 25 minutes.
Remove (reduce oven to 400).
Mix other ingredients and pour
over crust. Bake 400 for 25-30
minutes. Let stand 10 minutes
before serving.

The National Christmas Tree
Association says more than 33
million real trees are purchased
each year, making the tree business a billion-dollar industry.
While there are scores of evergreen varieties, certain tree
types are more popular than
others and thus more available
for purchase. The following are
some of the more popular trees
come Christmastime.

Eastern
Redcedar:
Branches of the tree are
compact and form a pyramid-shaped crown. The trees
should be a dark, shiny green
color. The eastern redcedar
is not a true cedar tree, but a
member of the juniper family.
This tree can make a great cut
tree with a homespun look and
a pungent fragrance.
Leyland Cypress: This
cypress is one of the more
popular Christmas trees in the
southeastern United States.
The tree will be very dark
green to almost gray in color. It
has little aroma. Some people
choose the Leyland because it
does not produce sap, which is

great for those with sap allergies.


Colorado Blue Spruce:
An attractive blue-green foliage
and a good symmetrical form is
what attracts many people to
the blue spruce. The Colorado
Blue Spruce has an excellent
natural shape and requires little
pruning to look like the perfect
Christmas tree. Its not very fragrant, but the tree needles may
give off an unpleasant odor
when crushed.
Scotch Pine: A classic
conical shape and very good
needle retention help make
the Scotch pine a popular tree
to cut for the holidays. Scotch
pines also are quite prevalent
thanks to the trees adaptability
to a wide range of climates.
Eastern White Pine: A
delicate green color and long
needles are found on this tree.
Another popular pine, the rich
fragrance of the white pine may
make it preferable to those who
like their homes to smell of evergreen.
Douglas Fir: The Douglas
fir is one of the foremost Christmas tree species in the United
States. It has soft needles that
are dark green in color. Those
needles radiate in all directions

Fraser Fir: Another popular
fir for Christmas is the Fraser fir.

profile, which makes it suitable
for smaller rooms.
Christmas tree maintenance
Nothing can guarantee the
health and appearance of a
tree after it is brought into a
home. But choosing a recently
cut tree that has good needle
retention can help. Here are
other tips for a long-lasting tree.
Use a sharp saw to cut an
inch off of the trunk base to remove the sappy covering that
forms from cutting. This will improve water intake.
Fill a tree stand reservoir
with warm water. Expect the
tree to drink heavily in the beginning.
Keep the reservoir filled every day and check to see how
much water the tree is using.
Place the tree far from heaters or other drying sources.

CAKE DESSERT

1 9 unbaked pie shell
1-1/2 cups granulated sugar
1/2 cup light corn syrup
1/4 cup butter
3 eggs
1 cup pecans

Combine sugar, corn syrup,


and butter. Bring almost to a
boil. Remove from heat. Beat
eggs just until frothy. Stir in
pecans. Slowly pour the hot

Bake at 350 30-35 minutes.
Cool on rack. Dont over bake.

4 eggs
Frosting:
8 oz. Cool Whip
1 pkg. instant lemon pudding
1 large can crushed pineapple

Mix cake mix, oranges,


oil, and eggs. Place in 9x13
baking dish and bake at 350
for 35 minutes. Mix together
Cool Whip, instant pudding,
and pineapple. Frost cake and
refrigerate.
