Wineology
BY LEN NAPOLITANO
What is corkage?
Is it okay to bring my own bottle of wine to a restaurant?
A wine list that is either too limited or overpricedor
both!may motivate you to pack a bottle of your own on
subsequent trips to the restaurant. Another reason could be the
wine list is geared toward mass-produced, national brands or
lacking a variety of styles. This is not implying that wine by a
national brand is not good. But some of these big names seem
to be everywhere and sometimes you just want a special bottle
of wine to make the occasion more memorable. If youre
thinking of bringing your own wine to a restaurant, keep these
tips in mind:
If you are uncertain about the restaurants policy, call in
advance or check its website to find out. Some restaurants dont
permit private party wine, a restriction more acceptable if their
wine list is extensive, diverse, and reasonably priced.
Choose a wine that is special. In other words, dont bring an
ordinary supermarket brand that is available everywhere. If
possible, avoid bringing a bottle the restaurant already has on
its listmany restaurants publish their wine lists on their
websites. To be safe, choose an older vintage they are less likely
to offer.

In the Redwood Plaza
next to Vallergas Market
and Spring will mean time to transfer, or rack, again as every few
months barrels need to be topped up to reduce the oxygen of
headspace created by the angels share, and the best way to
address this is to conslidate into fewer barrels. This causes a
gradual reduction of the overall wine in the cellar as barreled
wines are racked out of their homes and then into either a new
barrel or a tank, some folks deciding to maintain the integrity of
each wine lot while others allowing for a general mixing in a larger
tank before going back to individual barrels again.
Any given red spends 18 to 24 months in this cyclethough
some idiosyncratic producers may keep wine in barrel up to four
yearsand along the way, each racking creates a natural fining
effect as particles fall out of solution and end up in the belly of
each barrel. These lees provide for complexity but also possible
microbial contamination, which is why the monitoring of each
wine in barrel and as it is racked is most important of allwe can
taste and smell problems far quicker through sensory monitoring.
Regardless of which decisions are made, or not, each time the
winegrower chooses to tweak or not, to rack or not, how often,
the logistics of the racking, etc., all leave an impact on the final
wine. While the processes are scientific, measurable, and
generally predictable, the application is where experience and
creativity come to the fore. There is no one right answer, which is
what makes winegrowing so much fun. If we knew all the
answers ahead of time, thered be no point in doing it since wines
tend to have minds of their own. Consider that when you pop
the next bottle and enjoy!
Josh Stein has been in the Napa wine business for more than a dozen years, and, in addition
to being owner/winemaker of the Stein Family Wine Group, which produces a nationally and
internationally distributed portfolio of wine brands and donates a percentage of its sales, he

their subsidiaries, Discrete Wine Support Services and Napa Valley Writing Services.

SEQUOIA GROVE
A Taste to Remember
In The Beginning
Located in the heart of wine country, less than 50 yards off the Saint
Helena Highway, is Sequoia Grove Winery. The 150 year old rustic,
remodeled barn, once housing the entire winery operation, is now a modern,
comfortable tasting room where you can sample an array of wines including
highly rated vineyard designated Cabernets, while sitting in a tranquil
atmosphere surrounded by majestic 100 year old Sequoia Redwoods. The
history, and longevity of Sequoia Grove parallels the growth of the Napa
Valley wine industry. Since 1982, the current president and director of
winemaking, Michal Trujillo, has been with the winery, serving as winemaker
until 2003 when Molly Hill joined the staff as assistant winemaker, being
appointed head winemaker in 2008.
A visit to Sequoia Grove takes you on an escape where you can sip and
savor a variety of small lot production wines. The friendly, knowledgeable
staff enjoys talking about the history of the winery and the valley itself. Two
different tastings are offered in the tasting room: The Current Release Tasting
offers four current wines to taste. You may want to try the fun and fragrant
Rollicking Ros, a summertime favorite, the Napa Valley Chardonnay, the
Rebellious Red and the Napa Valley Cabernet Sauvignon. Of course, your
tasting room host can suggest what may go best with your individual pallet. If
you are a Cabernet lover, the Reserve Tasting is not to be missed. This is a
three wine Cabernet tasting featuring Sequoias Rutherford Reserve, and two

A Commitment to Quality
Wines from Sequoia Grove have a commitment to
consistency: All fruit is 100% from the Napa Valley, either
from the original estate vineyard, sourced from premier
Napa Valley growers, or from designated vineyards such as
Tonella, Stagecoach or Henry Brothers, each showcasing
the unique attributes of the different terroir. Although
Sequoias wines are age worthy, you may also be assured
that when you open a bottle of Sequoia Grove, it is ready
to enjoy and share with others.

Just like making fine wine, creating the desired balance in flavor and body in a microbrew takes time, along with a willingness to try out a variety of malts and hops until just
the right combination has been achieved. Leaning on the master brewing skills Jesus
developed over the years, Carneros Brewing has created their own distinct range of flavorpacked beers- each highlighting a specific malt type and its terroir if you will. Jesus and
team practice dry hopping which is the process of adding hops, usually in the secondary

Judds Hill Winery Offers Bottle Blending Day Camp For Groups Everywhere
There are a million reasons to visit the Napa Valley: the wine, the
food, the scenery, the teambuilding Well, that last one may not
have been high on your list, but if you are part of an organization that
occasionally has offsite planning meetings or team-building
excursions then you should definitely keep Napa top of mind. One
Napa winery in particular, Judds Hill Winery and MicroCrush, has
been at the forefront of creating innovative excursions to entertain
and educate groups of all sizes for years.
In 2009, the Finkelstein family of Judds Hill had the forwardthinking idea of creating a Bottle Blending Day Camp experience
(BBDC for short), during which visitors to their winery, located at the
southern end of Napas Silverado Trail, can actually craft their own,
personal, Napa Valley blend. The wines used for this blending
experience currently include barrel lots Cabernet Sauvignon, Merlot
Cabernet Franc, and Petite Verdot, all from Napa Valleys
extraordinary 2014 vintage.
Judds Hill specializes in making small lots of hand-crafted wines
for their Judds Hill label, and for dozens of their Custom MicroCrush
clients. It can take years to convert clusters of grapes into a ready-todrink bottle of red wine. Blending finished wine, however, is a vital
part of the wine making process that can be accomplished in a
relatively short time.
These BBDC experiences are led by extremely knowledgeable and
passionate wine educators and take about two hours to complete.
During the session, a wine educator will guide blenders through the
intricacies of creating a wine best suited to the tastes of the blender,
explaining and demystifying the process along the way. Once a
favored cuve has been decided upon and a name is chosen, the
newly minted wine-blenders will complete the process by hand-
32
bottling, labeling and spinning foil capsules over the bottle necks.
The wine is then ready to take home the same day!
Although these blending sessions are scheduled regularly
throughout the week for small groups, the Judds Hill BBDC
experience is also a wonderful outing for groups ranging in size from
20 to 250. With a larger group, the participants are divided into
teams that compete to craft the best blend as judged by an expert
panel. The winning blend is bottled and given to all participants to
take with them that day. If your group is in the Bay area but cant
quite make it up to Napa, the folks at Judds Hill have a mobile
option that brings the blending session to you! A team collaboration
over a custom cuvee is sure to be a lively and memorable group
experience. For more details visit juddshill.com or contact the
winery by calling (707) 255-2332 or writing to info@juddshill.com.

Becoming Independent
In 1967, parents organized Sonoma Countys first communitybased program for adults with developmental disabilities, called the
Manual Skills Training Center. Two years later, the State Legislature
affirmed that people with disabilities had the same rights as other
people and declared the responsibility of government to ensure that
those rights are achieved, through the Lanterman Act. Over the next
decade additional support programs were established in Sonoma
County to provide adult activities, independent living support
services and to advocate for people with disabilities. In January 1980,
this group of programs incorporated as a 501c(3) tax exempt charity

Sonoma Valley Wineries Partner with Valley of the Moon Music Festival
Celebrated vocalists Nikki Einfeld and
Kyle Stegall headline this summers Valley of
the Moon Music Festival in concerts of
Schubert and Schumann, Mozart, Rossini
and more. Now in its second year, the Valley
of the Moon Music Festival is the nations
first festival devoted entirely to Classical and
Romantic music on period instruments, and
this years theme, The Voice in Chamber
Music, explores the influence of song on
19th-century chamber music including
Beethovens Septet, Schuberts Death and the
Maiden Quartet, and lieder for tenor and
soprano. The Valley of the Moon Music
Festival takes place at the Hanna Boys Center
in Sonoma, July 16-31. Tickets can be
purchased at
valleyofthemoonmusicfestival.org.
This years program showcases a love of
opera and lieder in pieces both instrumental
and vocal, says fortepianist Eric Zivian who
co-founded and co-directs the annual event
with cellist Tanya Tomkins. And we are
delighted to present two incredibly gifted
young singers to perform this music.
Einfeld and Stegall will perform six
concerts in all. On Sunday, July 17 at 4 p.m.,
Stegall sings songs by Mozart in a program
titled Inspired by the Magic Flute, which also
features Elizabeth Blumenstock on violin
alongside Tomkins and Zivian in chamber
works by Clementi, Beethoven and Mozart.
He sings Schubert lieder in a program titled
Death and the Maiden, July 23 at 4 p.m.,
which also includes the composers famous
string quartet. The following day at 4 p.m. he
performs Schumann's Liederkreis in a
program which also features Beethoven's
Horn Sonata and a Haydn Piano Trio.
Einfelds concerts include Arias and
Quintets, featuring songs by Spohr,
Meyerbeer and Mozart, July 29 at 7:30 p.m.;
Star Power in the 19th Century, featuring
songs of Schubert and Rossini, July 30 at 4
p.m.; and The Young Mendelssohn, featuring
Schuberts The Shepherd on the Rock, paired
with Mendelssohns famous Octet, July 31 at
4 p.m.
A lyric coloratura soprano, Einfeld has
been widely recognized for her high flying

featuring in room whirlpool tub, fireplace and private balcony.
Last but not least, book a wine and food pairing at our sister
winery Zina Hyde Cunningham on the historic Sonoma square.
