Packaging is an important factor in quality control. Poor packaging will lead to
exposure to the effect of environment, such as humidity,impurities and other. This can cause
the crackers to become stale, attacked by fungus, rancid, have foul odour and lose their
nutritional value.
For Leko Meko, we use Stand Up Pouch + zip lock packaging bag that is sealed with
2 sides left-side, right side, bottom side, and zip lock. The top-side opened is where the
product goes in. The product willl be seal after product insertion.

INTRODUCTION

Fish crackers is a popular snack food product in ASEAN community which has high
potential economical impact. Currently, its manufacturing is mostly practiced in small scale.
It seems to have a market potential of growth. It is called kaogrieb in Thailand, keropok
in Malaysia, kerupuk in Indonesia and biang phong tom in Vietnam.
In Malaysia, there are several fish cracker producers that are operating in the coastal
areas in Kelantan, Terengganu, Pahang, Johor, and Kedah. Normally, the types of fish used to
process the fish crackers are Wolf herring, sardines, round scad, threadfin bream, ox-eyes
scad and others.
Leko Meko are deep fried fish crackers made from fish and spices that serve as
flavouring. The quality of crackers produced is excellent because we use a fresh fish before
processing the fish crackers and it has a good expansion from puffing, crispness as well as
low moisture content and low boil absorbtion. The shape of the fish cracker is circular cute
shape. The shape make it easier to eat and customers can enjoys eating it at the same time.
Our Leko Meko is steamed during the process of making the fish crackers. The
crackers from the dough which is steamed have better quality compared to those from the
dough which is boiled. A moisture test is measure before the packaging process so that
nothing will affect the shelf life of the product. In nutritious aspects, Leko Meko could be a
particularly nutritious snack. It is not only providing carbohydrate and protein but also some
micronutrients.
DGanu Enterprise provides small cup of chili sauce in every pack of Leko Meko.
Thus, it can be use as a dipping sauce for the fish cracker. We use a kraft paper pouch as our
packaging for Leko Meko as an eco-friendly.
