Vienamese flan

1) Ingredients
a) 7 eggs
b) 1 cup coconut milk or 1 cup heavy cream
c) 1 cup dark brown suger
d) teaspoon each of powdered cinnamon,ginger,anise,cloves
e) 1 teaspoon baking soda
2) Preparation
a) Melt brown suger with coconut milk,in a sauce pan and boil for
15 minutes.add species and baking soda,strain,remove mixture
from heat and let stand for 5 minutes.
a) Add slightly beaten eggs in a steady stream and beat the
mixture until smooth with a wooden spatula.pour through fine
strainer into a preheated greased loaf pan 834.bake
uncovered for 20 to 30 minutes in a 350f oven.
b) Remove from oven and let the cake stand for 15 minutes before
from pan chill in refrigerator for 3 hour.serve cold

Chicken With Cinamon (ga oup que huong)

1) Ingredients
a) 8 to 10 pieces of cut-up chicken
b) 1 cup cooking oil
c) 1 tablespoon cinnamon powder
d) 2 teaspoons salt
e) 2 teaspoons suger
f) 2 garlic cloves,well washed
2) Preparation
a) Season the meat with garlic,cinnamon,salt and suger.soak in
cooking oil for 1 hour at room temperature.
b) drain charcoal grill over low fire until golden brown or cook in the
oven at 300F for 1 hour.Makes 6 servings
c) .serve with.serve withsticky rice.

Sweet and sour salad (goi)


1) Ingredients
a) 1/3 a cup vineger or 5 tablespoons fres lemon juice

b) 1/3 cup water


c) 3 tablespoons sugar
2) Preparation
Use any combination of the follwing vegetables to prepare the salad :
a) Onion,radish,carrot,celery,bell pepper.
b) Chop the vegetables finely,marinate in salad dressing place in
refrigerator for about one hour:some other vegetables do not need
to be,marinated,quartered cucumbers cut diagonally,finely chopped
cabbage,coarsely broken leaf lettuce
c) toss the ingredients well with salad dressing ang add to other
vegetables when ready to serve.

Chicken Porridge (chao ga)


1) Ingredients
a) On chicken
b) Cabbage half
c) A bunch of celery,some monodium glutamate
d) Fish sauce,black pepper,red pepper,garlic,vinegar
e) Onion aromatic vegetables
f) rice
2) Preparation
a) Clean the chicken well.take the insider out.boil the chicken for a
minutes.take it out and the let it cool.keep the soup bpiling.tear the
chicken it pieces.
b) Clean the ric.Drain it.fry it slightly then boil it in yhe chicken
soup.season the soup with some monodium glutamate and some
fish sauce,according to taste.
c) Crush well some red peppers and 2 cells or garlic.mix them with
half a bowl of vinegar.slice the onion in thin section.cut aromatic
vegetables in small pieces.cut the cabbage,too
d) Mix torn chicken with cabbage,onion and aromatic vegetables in a
basin.add some red pepper in vinegar and some calery
e) Put chicken salad in a plate.served with very hot porridge,some
black pepper and fish sauce.
