he Waffle Experience takes breakfast food to a whole new level.

Come to this fine-dining restaurant in Folsom and experience a
one-of-a-kind meal.
Michael Donoho, chef proprietor, first opened The Waffle Expe-
rience with Jeff Belaski, co-owner and general manager in Sacramento in July
2014 and since, it has been a huge hit, Belaski said.
The two met when they served in Desert Storm in the Marine Corps. 30 years
ago. Later Donoho went to culinary school and Belaski went into business and
finance.
In 2012, Donoho, who was the executive chef at the Waldorf Astoria Resort in
Boca Raton, Florida, reached out to Belaski and the pair rekindled their friend-
ship, Belaski said.
Donoho took a true Belgium waffle and infused it with flavors, Belaski said.
The flavors are incredible, he said.

trademarked the name as The Waffle

In 2014, they opened up the Sacramento location and in 2016 they opened the
Folsom location.
The more popular items on the menu include the Praise the Lard and We
Found the Beef which is served on a fresh herb waffle, Belaski said.

years and decided to open a different kind of delicious breakfast restaurant.

and it has olives, onion jam, tomatoes, balsamic, arugula, feta
cheese, sun-dried tomato pesto sauce, an egg and that is all
served on a fresh herb waffle, he said.
When you go into The Waffle Experience, whether it is in
Sacramento location or Folsom, you will have a personal ex-
perience from the moment you walk in the door, Belaski said.
I am a meet and greeter, he said. Every customer is
spoken to and its a family-oriented atmosphere. The Folsom
location will have a huge chalkboard that kids can write on. A
lot of people write how many times they have been there.
One thing Belaski wanted people to know about The Waffle
Experience is that they make everything fresh daily no mi-
crowaves and no heat lamps. They do have a freezer, but only
keep ice cream inside, he said.
Belaski said that the average check charge is around $16,
which includes entre and a drink. The menu also includes
items for as low as $6.
Something about the restaurant that is unique is while
waiting for food, you can watch a screen that shows the
kitchen preparing your meal.
How many places show what is going on in
the kitchen? How many places make every-
thing fresh, every day? Belaski said. Chef
Mike created something that had never ex-
isted. Everyone has chocolate and strawberries
on their waffles, but they have not done what we
have. That is our pride and joy.

BEER BUDDIES: From left, co-founders Tom Fuquay, Heidi Wilder, Kim Dudeck and John Dudeck have been brewing their own beer since
2012, but now everyone can enjoy it, in the Nimbus Winery.

Fort Rock can have up to 12 taps and within the month, eight
of them will be filled with unique beers.
In addition, unlike any other brewery in the Sacramento
region, Fort Rock Brewing develops beer with 100 percent
Folsom water.
I think it makes a difference in the beer quality because it is
clear, soft water from the mountains, Fuquay said. There are no
minerals in it and its not ground water. Its just easy for beer.
Once the beer is brewed, it is promptly served.
One of the greatest things people can get from coming in
here is fresh beer, Fuquay said. A fresh pint of beer compared
to a bottle that has been on the shelf for a couple of weeks, it
just tastes better.
Wilder said the brewery is family-friends and dog-friendly.

music from the University of Breslau. The music blends
serious and light-hearted, sometimes comedic, elements,
including excerpts from college drinking tunes, leading the composer to describe the piece as a very boisterous potpourri of
student songs. He conducted the premier performance at the university in 1881.
Handels Organ Concerto being performed for this program is one of six he published in 1735 and 1736. Handel him-
self was an organist and introduced the chamber organ into his oratorios to reinforce the voices of the chorus. His use of
the organ with other instruments served as a model for later composers.
Saint-Saens Organ Symphony was the composers last attempt at the symphonic form. After writing it in the early
1880s, he declared he had given everything to it I was able to give. It was first performed in London in 1886 and dedicat-
ed to the memory of Franz Liszt after that composer died two months later. It is scored for both organ and piano. It may
sound familiar. The music has been recorded in several versions and was featured as the main theme in the Babe movies
and can be heard in How to Get Ahead in Advertising.

In college, Pelley started doing stand-up comedy and became very interested in
it. Later, he helped California State University, Sacramento develop a course on
the role of humor in communication.
After college, he became one of the original writers on Saturday Night Live. Soon after, he
started Laughter Works, where he talked in front of large corporate groups such as Ameri-

People who enjoy their work environments are more productive at work, he said. Its
not like everyone getting to gather in the lunch room, telling jokes and do pranks in the
workplace. Its about using laughter as a tool to make people more comfortable and make
the environment more accepting its just how to have fun.
During Pelleys seminars, he doesnt tell jokes, he tells stories, he said.

GAI HOUSE
At Ashlee and Brian Gais residence, the instant you walk in, you
feel like you are in Tahoe. Their backyard features a low-maintenance
landscape, outdoor kitchen and pizza oven, pool, vegetable garden, a view and many different outdoor rooms to sit and
relax.
It started as a desire to find a vacation home in Tahoe, Ashlee said. But then we realized we wouldnt have a lot of time
to go to the home, so we looked into changing what we already had. We found that we could make our backyard look more
like a stay-cation-type place.

Ashlee said her husband wanted a pizza oven,

and she wanted a fireplace and those were their
only requirements.
Eventually, it evolved into a slightly bigger
project.
With eight different seating areas throughout
the yard, the family has no problem having the
room to entertain with friends for their Sunday
night-pizza night get-togethers.
Ashlee said there are so many things about her
yard that she loves, but she narrowed it down to
the two original things.
Its a toss up between the pizza oven and
being able to do pizza nights, and being able
to sit on the couch by the fireplace, she said. I
love that.
Ashlee said she is looking forward to sharing
her yard with everyone during the garden tour.
I love sharing this with people, she said.
This is a fun space and that is one of the rea-

ROMERO HOUSE
At Joanne and Paul Romeros residence, guests
will enjoy the simplicity and comfort of the
backyard.
Paul said he and his wife hired a landscape
architect designer and then after six months, the
yard was complete.
With a kids playhouse, greenhouse, upper
patio, and other seating areas, this yard makes
you feel right at home. In addition, there is a koi
pond and a three-tier waterfall.
I wanted to have a low-maintenance yard
with as much color as possible, he said. It is a
very comfortable place and we are a very fami-
ly-oriented and nuclear family, so our intention
was to have family gatherings here as much as
possible.
Paul said his favorite part of the yard is the
upper patio because that is where the family
usually gathers when they come over. He said

EL DORADO WINE COUNTRY
EXCLUSIVELY

PASSPORT 2017 ALLOWS WINE-LOVERS TO TRY VINO OVER TWO WEEKENDS

E
BY RACHEL ZIRIN | PHOTO ARE COURTESY
l Dorado Passport 2017 is a weekend event in the Sierra Foothills to enjoy food, music and locally-produced
wine. This adventurous event can be experienced over the course of two weekends, or just one. Passport 2017 is
not just wine tasting, it is the chance for education and a culinary experience.
For the last 26 years, the El Dorado Wine Association has planned an experience for guests to go to more
than 20 El Dorado County wineries to taste wine with food pairings. Go behind the scenes and interact with those in-
volved in the wine-making process.
Passport 2017 will be two full weekends. There are many different ticket options to fit the right person. There is a week-
end passport, as well as a Sunday-only passport and designated driver pass.
The most popular option is the weekend passport. Customers will have access to special events at the participating win-
eries, food, and music, said Stephanie Simunovich, 2018 Passport chair. We also offer a Sunday ticket for a lower rate.
When purchasing tickets, choose a starting-point winery to retrieve tickets. Each winery visited thereafter is up to attend-
ees.
We usually see over the two weekends about 3,000 to 4,000 people, Simunovich said. It gives customers the opportuni-
ty to interact with all the wine makers, wineries and owners.
Some of the wineries participating include: Bumgarner Winery, Busby Cellars, C.G. di Arie Vineyard and Winery, Cha-
teau Davell, Skinner Vineyards and Winery, and many more.

30 | FOLSOM LAKE ENTERTAINER

FLE April 2017.indd 30 3/24/17 3:14 PM

Its such a fun way to experience this
wine region. People usually dont get
to connect with the people behind the
scenes and this is an event that they get
to interact with them, Simunovich said.
At this event, guests will get the whole
how-to experience of wine while com-
plimenting some small plate dishes or
snacks.
My favorite part of this event is the
opportunity to see the inside the winer-
ies, she said. That is the most special
thing to offer. Guests will get to see
inside the wineries cellar, go in private
tasting areas, and experience some food

county over the weekend, Simunovich
said.
Guests should take the time to check
out the events website to see what will be
included in the passport.
Guests should expect that they are go-
ing to get a chance to taste a wide variety
of wine, with fantastic food, Simunovich
said.
The El Dorado Wine Association is a . . .wine's favorite chocolate
nonprofit organization and a portion of
the proceeds are donated back to a chari-

hen we think about the Sierra Foothills wineries, normally Amador County and El
Dorado County comes to mind. The forgotten child is Nevada County. With over
20 wineries located over a vast area, it is well worth the weekend trip. Check out
sierravintners.com for the listings and profiles of all the wineries.
Way off the beaten path lays one of our favorite, Naggiar Vineyards. Well worth the drive along
scenic and historic Route 49. And surprisingly just before the vineyard, there is a bison ranch where
you can see them grazing the fields.
The winery is on a picturesque 135-acre estate of which
60 acres are under vine, growing 18 different varietals,

fruit from Naggiar because of their exceptional quality.
Naggiar offers tours of the estate for a small cost. Tours
last 45 minutes and allows guests to get up close and personal with the vines. Its an exciting expe-

Naggiar Vineyards was recently voted Sacramento Regions Best Winery by KCRA 3 voters for an
unprecedented seventh consecutive year. They must be doing something right.

Spring is finally here! No more time
buried under heavy blankets and eating
foods that are just the same. While those
meals are enjoyable during the winter
months, in the spring you just want
something light and tangy. Nothing
says crisp like a fresh green apple. The
tartness of the apple and the homemade

IMMERSION
AMADOR FOUR FIRES
EVENT HIGHLIGHTS
THE FOOD
Traditional foods of Spain, Italy, France and her-
itage California cooked over open flame by local
chefs, then paired with wines of each region.

THE WINE
Over 40 wineries pour vintages inspired by
the four regions sourced by winemakers and
winegrowers from local Amador County vines.

THE IMMERSION
Interactive activities, meet-the-winemakers
sessions, expert panels, cooking demonstrations,
sensory station, local merchants and tastings and
music ignite all the senses all day.

THE MUSIC
Jesse Hendricks (Spanish guitar and world
music), and Wasted Space (classic rock hits) draw
guests in to dance or just relax to a variety of
sounds and rhythms throughout the fairgrounds
all day.

NEW FEATURES
Family-friendly area with animals and activi-
ties, Meet the Experts, Live BottleTalk Show, Beer
vs. Wine seminar, and more.

CHOOSE A REGION
Next, pick a region to start off your tasting experience: Italy, Iberia, France, or heritage California. The wines are separated by
region so attendees can taste them side-by-side.
Be sure to sample wines with the cuisine in that region, Mueller said. The chefs have designed their dishes to pair perfectly
with the wine. Take a sip, a nibble, and then chat with the winemakers and chefs themselves. Some folks hop from winery to win-
ery within a region, others pick a varietal (like Barbera in the Italian region) and make taste comparisons. Whatever approach you
choose, you cant go wrong.

ENJOY YOURSELF
In between each region, Mueller also recommends that you take time to relax: Take a seat in the shade, explore the sensory sta-
tion, or listen to live music (provided by a winemaker who doubles as a musician). Be sure to check out the local purveyors of olive
oils, cooking sauces, candies and more.
But dont miss the bottled wines available for sale as there are some great values, Mueller said. Plus, receive a free A4F tote
with the purchase of four or more of your favorite wines.
(The A4F volunteers are happy to set side purchases for pick up at end of the day.)
But most of all, Mueller said. Immerse yourself and enjoy!

Chef Carolyn Kumpe honed her craft through
professionally cooking in various kitchens, train-

the Bay Area, and in the Langue dOc region of
France. It was under the guidance of Judy Rogers
of San Franciscos Zuni Caf & Grill where she
learned to appreciate the beauty and simplicity of
food in its purest, freshest form.
Kumpe continues to receive widespread
attention for her food. Inspired by the bounties of perfectly fresh and sustainable
produce in the Sierra Foothills, Kumpe opened Charlottes Bake Shoppe of El Dora-

That same year, Charlottes Bake Shoppe was rated by Al Pierleoni of the Sacramen- SNEAK PEEK MENU

WINE STATIONS
FOCUS ON SPECIFIC EUROPEAN, CALIFORNIA REGIONS AT AMADOR FOUR FIRES
BY ALEXIS EISENHAUER | PHOTOS ARE COURTESY

Sparking the unique concept of Amador Four Fires Festival, the European regions of Rhone (Southern France), Italy, Iberia (Spain/Portugal), and the
Heritage region of California are really where todays Amador County wine country all began.
Specific varieties of wine grapevines flourish in specific climates, and each of these featured regions has its own particular champions, including: Syrah
and Mourvedre of the Rhone valley of Southern France; tempranillo and touriga of the iberian peninsula of Spain and portugal; Barbera and Sangiovese
of italy; and Zinfandel of heritage California (with the states oldest Zinfandel vineyard right in the heart of the Shenandoah valley in Amador County).
Amador winemakers and winegrowers know very well the treasure in the lands climate that allows different regionally inspired varietals to flourish, as
award-winning Zinfandels, Syrahs, and Barberas can attest. Exclusively Amador-grown wines are poured at Amador Four Fires for tasting.
Unique to Amador Four Fires is that wines are poured in region-focused zones enabling attendees to taste similar varietals poured by multiple win-
eries side-by-side. This encourages an attention to the different characteristics that one type of wine can exhibit from different vineyards and processes,
offering guests an experience unlike other wine and food festivals.

MARY POPPINS COMES TO
THE HARRIS CENTER
BY MATTHEW WHITLEY | PHOTO IS COURTESY

Since it opened on the West End of London in December

2004, Mary Poppins, the musical based on the childrens
books by P.L. Travers and the Walt Disney film released in
1964, has been a huge success winning multiple awards
in both England and New York. The novel and sub-
sequent film tells the story of a magical English
nanny who comes to the Banks family taking
the children on magical adventures and
teaching their preoccupied parents a
thing or two about family. Written
by the Sherman Brothers, script
by Julian Fellowes, this beloved
stage adaptation is being presented
by the El Dorado Musical Theater, a
musical theater group for youth with
performances at the Harris Center. For
EDMT its a perfect stage show to add
their already unbelievable repertoire
after wowing audiences with recent
productions like Shrek and Wizard
of Oz.

goal with this role. Im aiming to step into situations and make
them just a little bit brighter, Kelly Maur said, an EDMT
veteran.
Filling the petticoat of the beloved nanny is no easy feat. Its a
role as iconic as they come, but with several roles under Maurs
belt and working in the EDMT vocal group, High Voltage has
prepared her for the role.
At EDMT, Ive taken tap and jazz and had the opportunity
to perform in many leading roles. Im also a fifth-year member
of High Voltage. I have had great training, as well as, countless
opportunities to become a smart performer. I adapt easily and
learn quickly because of this company, which has proven very
valuable as a performer, Maur said.
This production of Mary Poppins, like most shows, requires
weeks of rehearsal and thousands of hours of volunteers, but its
just such a labor of love for everyone involved.
One of the reasons Wilson chose this play, in addition to the
multiple roles it offered, was the story itself.
Mary Poppins is really about the relationships within the
family, Wilson said. Its really about finding the truth of fam-
ily and love and all of that because its really a story about the
Banks family. Its not Mary. Its not Burt. Its the Banks family
and Mr. Banks particular. Hes a stink butt to start with, you
know, and how that family gets healed and how they find one
another again and come together.
