I f you like gin, you might just fall in love with Darjeeling gin.
California Distilled Spirits Darjeeling Gin is distilled in Auburn. It is the
only distillery in Placer County. Its closest neighbors are scattered about in El
Dorado Hills, Tahoe and Citrus Heights.
Ed Arnold is the brains behind CDS. Operating out of an industrial space by
the Auburn Municipal Airport, Arnold distills, bottles and sells out of the space.
And he is self taught. He learned how to make gin from the Internet and learned
from knowledgeable distillers.
I got some excellent advice from people as I was starting up, Arnold said.
It took five years to get where he is now. The first two years was acquiring
equipment and licensing. The second phase was three years of creating lovely
gin.

How it is made
Gin is made from juniper berries and botanicals. CDSs gin is special
in that during the process, Darjeeling tea, along with other botanicals
are housed in a compartment of the distillery. When alcohol vapor
comes up into this chamber, it extracts the oils of the botanicals.
Thats why the flavor (of the gin) is so long, Arnold said.
Darjeeling tea comes from a region in India in the foothills of the
Himalayas at the 8,000-foot elevation level. Its considered one the
great teas.

The gin has a flowery flavor, but its not perfumey. It is quite good all
on its own and this writer thinks there is no need to water it down with
ice or tonic.
It is floral, soft, delicate more nuanced, Arnold said.

Other spirits
Gin, however, isnt all that CDS produces. Arnold has made pear bran-
dy bourbon and is currently in the process of making whiskey which is
currently aging in barrels, waiting for peak flavor.
To make the whiskey, Arnold used grain mashed by Auburns Crocked
Lane Brewery. And then the magic happens.
Alcohol is created by those lovely yeast animals in there marvelous
creatures, he said.
The whiskey tastes young, but it has only been aging for a couple
years. Maturity should bring out deep flavors.

Back to gin
Every 10 days, 130 bottles of Darjeeling Gin is packaged at CDS.
Production is not a limiting factor sales is, Arnold said. Id like to
get that up.
The gin is available in many retail stores in the area, including: Total
Wine, Save Mart, Whole Foods, Corti Bros., Taylors Market and Grocery
Outlet. Check the companys website for all distributors.
Customers can save a few dollars and go directly to CDS, and perhaps
squeeze in a tasting as well.

Background
Arnold has spent years working mostly with orthotics and prosthetics
until 2003. Following that, he worked for HP doing medicative work until
about 2012.
And then, I left to do something much more fun, he said.
Arnold has been an Auburn resident for decades. His children were
born at Auburn Faith Hospital and went to Sky Ridge Elementary, E.V.
Cain and Placer High School.
Auburn is beautiful. It has a lot of things going for it. The weather is

contains approximately 10 calories.
Arugula also contains 1 gram of protein, 0.3 grams of fat, and 1.5 grams of carbohydrate
(including 0.6 grams of fiber and 0.8 grams of sugar).
Consuming 2 cups of arugula will provide 20 percent of vitamin A, more than 50 percent of vitamin K,
and 8 percent of vitamin C, folate, and calcium needs for the day.
Arugula ranks among the top 20 foods in regards to ANDI score (Aggregate Nutrient Density Index).

Patrick Bollinger grew up in Meadow Vista. Diane is
from El Dorado Hills. Farming was not always his cho-
sen field. Then in 2006, he hiked the Pacific Crest Trail
from Mexico to the Canadian border. Along the way he
became friends with several hikers who operated small
farms.
After visiting a couple of the friends, the couple de-
cided to test the waters for farming. They spent three
summers learning the business as interns at Mountain
Bounty CSA farm in the Nevada City area. They decided
they liked it and moved to Foothill Roots Farm in fall
2012.
The Bollingers lease the land from a family that
homesteaded the property in 1852. A log cabin dating
from the 1800s still stands.
As farmers, the couples focus is providing a diverse
selection of produce for their CSA customers.

BREAKFAST SALAD
Salad can very well be a breakfast meal. In fact, it is suggested to eat
breakfast like a king, lunch like a prince and dinner like a pauper. This
salad is a breakfast meant for a king. Eating first thing in the morn-
ing makes me feel amazing and healthy for the duration of the day. A
granola bar just doesnt seem to cut it. Greens are great for getting
your body to wake-up! Top with bacon, avocado and a fried egg for a
delicious savory jump start to the day. Avocado is a great ingredient
that will aid in keeping that full satisfied feeling until lunch time. Keep
the egg yoke soft to work as a dressing.

Serves 2
1 large handful of spinach
1 large handful of arugula
2 eggs Add 1 teaspoon of water to the pan and cover to allow eggs to
steam. (This helps the eggs not stick to pan as well.) Optional crack yoke
2 tablespoons olive oil plus 1 teaspoon
for a fully cooked yoke or leave intact for a runny yoke.
1 ripe avocado
Remove eggs from pan and set aside.
4 strips of bacon
Add 1 teaspoon of olive oil to the pan and sautee the onion until
yellow onion diced
fragrant.
*Optional: 1 sweet potato
Remove from heat and add to the salad mix.
Slice the ripe avocado and arrange on greens.
Arrange the spinach and arugula on a plate or in a serving bowl.

Open up all the windows and set up a salad bar in your kitchen with
all of your favorite fruit and veggie toppings. I personally love having
fruit in my salad. One of my go-to salads is a honey mustard apricot
arugula salad with homemade candied pecans and more toppings. A
little crunchy, a little sweet, and a whole lot of tasty is such a simple
dish. Add chicken or shrimp to make it a full meal or enjoy alongside
that first barbecue of the season.
Salad Ingredients: Instructions:
2 cups mixed greens In a large bowl or plate arrange

I know what it is like to be homeless as a young


adult and I know what its like to be homeless as
a child with your family as well. Its a very painful
process, Lieutenant Justin Docherty said, of the
Auburn Corp Salvation Army. One of my biggest
rewards is knowing that we avert that.

At 18 years old, Docherty found himself in a very


dark place. He was sleeping in the park on the
streets of London when he finally sought out an
outreach worker of the Salvation Army. He was
then placed in emergency shelters in downtown
London and shortly after was welcomed into
the program for young homeless men.

They provided for me space to be wound-


ed, space to find healing, space to get
skills and guidance, and space to meet
Jesus, Docherty said. Thats the best
thing of all.

Docherty said he took solace in a


passage in the Bible book of Mat-
thew that reads, Come to me, all
you who are weary and burdened,
and I will give you rest.

At the time he interpreted the


scripture as making a deal with
Jesus. He decided to give it a
try and lay down his burdens in
hopes that he would receive rest
in return.

A lthough Jeff Voracek has owned Red Mesa Gallery in Penryn for the past eight years, the
stories enclosed within the walls of the old building go back roughly 100 years.

racek continued. And the reason is primarily that in the past if you
were Asian, there were designated areas that you were allowed
to live in. So this area was one of those areas because it was away
from the railroad tracks; it wasnt as preferred.
What is currently the main, back room of the gallery was once
the bustling Mikawas Fish Market, from approximately 1921
through 1976. The original sign from the fish market now hangs
on the gallerys front door displaying a young Japanese woman in
a decorative, red kimono. After WWII, it was bought by the Wong
family who also owned Victory Market next-door and eventually
began Bel Air markets in 1955.
In the 1950s, the upper story of the building became home to
the Penryn Hotel with 12 bedrooms and one bathroom.

The building is 3,700-square feet. This includes the theater, lobby and

How many seats does it have?


The theater has 160 seats, divided between the orchestra and mezzanine
areas.

What are unique aspects of the building?


The Colfax Theatre is unique in that it is a movie theater with a perfor-
mance stage plus enough theatrical lighting to do small-stage presenta-
tions. The seating is sloped for excellent viewing lines and the acoustics
are excellent. The theater is ADA-accessible, with special seating for
wheelchair users. The theater is also equipped with Dolby Digital sur-
round sound.

What kind of events and productions do you have planned?


We will be operating The Colfax Theatre as a historical venue for film,
theater, multidisciplinary art, dance performances, live music and
community events. There will be a wide range of cultural offerings, ap-
pealing to every age and demographic. We will also be offering classes,
workshops and intensives in a wide array of performing and fine art
modalities.
