RESUMEN
The canning of fish is one of the most conserved forms of conservation in the
world, due to its practical form of use and its aseptic conditions (sterilized
preserves), which represents one of the conservation alternatives that would
contribute to a greater degree to To solve the food problems of the Peruvian
Amazon. In the present research the development of preserves with smaller and
medium fishes of the region has been tried for the first time, considering the
species that have more availability and low cost (MIPE 1981-1987). The
experiments were carried out at the National Intercultural University of the
Amazon (UNIA) in its water laboratory, using the high pressure method for pre-
cooked fish. Using two varieties of fish, maiden and maparate. From the
investigation, T1, T2 and T3 treatments of maparate fish were better for preserves
with tomato sauce, of which the T1 treatment had the best coverage in tomato
sauce mixed with 20% brine at 8%, as packaging glass containers were used
because of the lack of a can sealer.
Uno de los principales problemas que enfrentan los pases a nivel mundial
es la bsqueda de fuentes de alimentos que compensen la deficiencia
nutricional que cada da se va agravando, al respecto, Castaeda y
Guerra et al. ( 1983), indican que los niveles nutricionales de la poblacin
amaznica, as como del tercer mundo, sufren cada ao mayor deterioro,
estando en forma inversa al crecimiento poblacional, por lo cual se hace
necesario optimizar el aprovechamiento de los recursos y desarrollar
tcnicas de produccin de protenas, fundamentalmente de origen animal,
que compensen la deficiencia existente, porque la amazona con su gran
potencial hidrobiolgico, podra contribuir a solucionar estas necesidades
nutricionales.
