4-501.12 - CUTTING SURFACES
Observation: (CORRECTED DURING INSPECTION): The white cutting board were found in need of
resurfacing or replacing.
Corrective Action(s): Resurfaced or discard cutting boards or blocks with excessive scratching or scoring. Action
Taken: Cutting boards were taken out of service, violation corrected.
Code citation: Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be
resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being
resurfaced.
