SPIRITS / DISTILLED BEVERAGE

Distilled Beverage / Spirits or Liquor

A preparation for consumption containing ethyl alcohol purified by distillation


from a fermented substance such as wine, malt, or grain, Distilled beverage is
usually restricted to alcohol beverages.

SPIRITS AND ITS CLASSIFICATION

1. VODKA – is distilled from mash of cereal grain or potatoes and is redistilled to


purify it. Vodka is usually unaged and generally bottled at 40% alc/ vol.

Vodka is becoming more and more popular, mainly because of the newer vodkas
that include a flavoring, such as cranberry vodka and lemon vodka.

2. GIN - a spirit distilled from a fermented mash of cereal grains. The distinct flavor
of gin comes from exposing the vapor to juniper berries and other plant product.

Gin is usually unaged and is generally bottled at 40% alc/vol. Like Vodka, gin
may also have additional flavoring added, such as lemon or orange.
3. RUM – is distilled from fermented mash of sugar cane and/or molasses. It is
generally bottled at 40% alc/ vol.

Five (5) Types of Rum

a. White Rum –
b. Amber Rum – coloured by aging
c. Dark Rum - coloured by aging and the addition of caramel.
d. Spiced Rum - coloured with caramel and flavoured with spices.
e. Over Proof Rum – higher alcohol content: Colored by aging and the addition
of caramel.

4. WHISKY / WHISKEY - A distilled fermented mash of corn or other cereal grains.


It is generally bottled at 40% alc/vol.

Four (4) Types of Whisky:

a. Scotch whisky – Scotch comes as a single malt scotch or as blended scotch.

1. Single malt scotch whisky- a distilled mash of smoked barley malt.


The single malt contains whisky that originates from the same
distillery. It is aged oak barrels for at least five years before it is
bottled.

2. Blended Scotch whisky – is distilled in the same way as single malt.


Blends may be derived from single malt Scotch whisky originating
from several distilleries or from different malts.
b. Bourbon Whisky- is a distilled mash of corn and aged at least two years in oak.

Ex. Wild Turkey

1. Sour mash whisky- is another type of bourbon. It is also distilled


from mash of cereal grain, usually corn, but is charcoal filtered
before being aged.

Ex. Jack Daniels

c. Rye - is known as Canadian Whisky. It is distilled from mash of cereal grains,


such as rye, barley or wheat. Rye is aged at least three years before it is bottled.

Ex. Canadian Club and Crown Royal

d. Irish – a triple distilled from mash of barley malt and aged for at least four years
in wood.

5. BRANDY - is a distilled from wine or fermented mash of fruit. It is generally


bottled at 40% alc/ vol and aged according to quality desired and the applicable
laws. The types of brandies include Cognac, Armagnac and Grappa.

a. Cognac- is distilled from wine that is made from approved grape varieties
grown within the Cognac region of France. The cognac label gives an indication
of its age using the following notations:

1. V.S. ( Very Superior) – youngest Cognac label in the blend and aged up
to 4 years

2. V.S.O.P ( Very Special Old Pale / Plate) – Aged to 4 ½ years to 6 years

3. X.O ( Extra Old) – Aged 7 years and up


b. Armagnac – is distilled from wine that is made from approved varieties of
grape grown in the Armagnac region of France.

c. Grappa – is distilled from the grape stem, skins and seeds that are left over
from the wine making process.

d. Other Brandies - include those that are made from various grape varieties and
processes as well as from fruits other than grapes.

1. Calvados – is made from apples.

2. Kirsch – is made from cherries.

3. Slivovitz – is made from plums.

6. TEQUILA – is distilled from cacti called maguey, mescal or agave.

7. LIQUEURS - Sweetened alcoholic spirits that consist of four types:

1. Grains
2. Herbs
3. Dairy Products
4. Fruits
