Observation: (CORRECTED DURING INSPECTION): The mixer blade for the pizza dough was found with
dough on it from the night before.
Corrective Action(s): To prevent contamination clean the mixer after use. Action Taken: The blade was taken off
and placed in the dish machine, Owner will review their policy with employees to make sure it gets done.

6-501.14 - CLEANING VENTILATION SYSTEMS, NUISANCE, AND DISCHARGE PROHIBITION
Observation: The air ducts and filters are were found with dust and flour.
Corrective Action(s): Clean intake exhaust air ducts, exhaust air ducts and filters so they cannot be a source of
contamination. Clean the filters on a regular basis.
Code citation: (A) Intake and exhaust air ducts shall be cleaned and filters changed so they are not a source of
contamination by dust, dirt, and other materials.
(B) If vented to the outside, ventilation systems may not create a public health hazard or nuisance or unlawful
discharge.
