Hela Sausage and Processed Meats Short Course:

This course is the one you were always waiting for. It is specifically designed for
the smaller meat processor and for people who wish to start a meat processing
business. It is one of the most comprehensive, hands-on course in North America.
Other companies only tell you the theory of making meat products...

WE SHOW YOU HOW TO DO IT!

You will learn how to:

set up tumbling cycles and work with a vacuum tumbler


work with an automatic smokehouse
work with a vacuum stuffer
work with a silent cutter
formulate meat block recipes
prevent making processing mistakes

You will learn about the functionality of ingredients, such as:

carrageenan
cures and cure accelerators
phosphates
proteins
other, important food additives

If so desired, you may bring one of your processed meat products for us to help
you with. This course will be conducted by European Sausage Makers and
participants will be able to help in the processing of the products.

At the end of the course we will have manufactured approximately 35 different


meat products, such as:

various types of hams


roast beef
pastrami
various types of beef jerky
fresh sausages
smoked sausages
kolbassa
various types of stir fries
marinated meats
cold cuts and meat loaves

Seating is limited to 20 participants. The fee for the course is $695.00 (CAN) +
7% GST per person (including all course materials and lunches). Registration and
payment are in advance.
