Alice Waters
Before The Art of Simple Food, and before the popularity of farmers
markets and sustainable food, there was Chez Panisse.
When she opened Chez Panisse in Berkeley in 1971, Alice Waters
thought of the restaurant as a modest place, where her friends from
the neighborhood could gather. Now, 40 years later, Chez Panisse is a na-
tional treasure, where the food revolution was born and where new ideas
continue to emerge.

In Forty Years of Chez Panisse: The Power of Gathering, Alice presents a

photographic history of the restaurant in its cultural context, full of iconic
pictures from the Chez Panisse archives and vintage menus from special
events throughout the restaurant’s history. Along the way, she recounts
stories and includes the voices of her chef friends and admirers who

I h a d n e v e r b e e n ou t of t h e c ou n t ry when I decided to study abroad in the winter
of 1965. I arrived in Paris and it was like magic to me. I was supposed to be taking a cours
de civilisation at the Sorbonne, but I hardly ever went to class. I was too busy soaking
up the civilization in other ways—sitting in cafés, listening to concerts, arguing about

politics—but mostly by eating. From the student cafeteria to restaurants, to the market
on rue Mouffetard—I ate so many things I had never tasted before. I began to appreciate
how food anchored life to the land and the seasons, and I began to dream of sharing all
this with my friends back in Berkeley...
By now, hundreds of people have worked at Chez Panisse, and there are uncountable stories to be told of
what they’ve learned and what they’ve taught us and what they’ve gone on to do elsewhere. But this is my
story, of how I learned what we need to do in order not just to survive, but to thrive: We must reconnect
food and eating to agriculture and culture and get back to that place where meals mean more than merely
refueling, and once more enrich the celebration of life. And in order to do this we need to reconnect food
to the places we live, the seasons, and a humane agriculture that nourishes the earth instead of depleting
it. If we do these things, we can locate these values buried beneath the speed, expediency, cynicism, and
greed of the industrial food chain.
I will show how the seeds of these ideas were planted and how they have grown and blossomed and been
propagated from a modest frame house in Berkeley back out into the wide world beyond.

Bone-in Belly =
Spare Ribs and Bacon
When we do demos, we like to show
how easy it is to take one cut and make
it into two wildly divergent things. Bone-
in belly is the perfect example, and our
demo trick can easily be done at home.
Many of our customers don’t realize that
bacon is belly, hence the thick bands of
fat and thinner stripes of meat. Our pigs
are bred to be fatty and succulent, not
waifish—a look that’s really only prized
in the fashion industry. Nestled against
the pig’s ample belly are the ribs—these
are the spareribs, not baby backs, which
are cut from the loin area. When and
if we have baby backs in the case—and
we usually don’t—it means then we’re
also selling boneless pork chops. We
love to nibble on the bone of our chops
and assume our customers do as well,
so we rarely take the ribs off the loin.
Removing the ribs from the belly, on
the other hand, leaves you with two of
our favorite things: belly for bacon and
spare ribs.

You should be able to get a bone-in belly

from a good butcher shop or farmer.
When you get your hands on one, just
slide your 8-inch knife right under the
bones to pull the ribs off the bacon.
Make sure you keep your knife close
to the bones—do it slowly and watch
what you’re doing, so you don’t remove
anything destined to become bacon.
Once you’ve separated the two, it’s time
to cook.

Crystal Cook and Sandy Pollock
As seen on Food Network’s Throwdown! with Bobby Flay, the
Casserole Queens are two women revolutionizing the original

“The Valley” is what we in Texas call the Rio Grande Valley. It’s located on the southernmost tip of the state,
bordering Mexico, and it’s where Sandy grew up. A melting pot of American and Mexican cultures, the Valley
is known for its festivals, architecture, and cuisine. So when Sandy talks about comfort food, she thinks of
dishes that are often heavily influenced by traditional Mexican flavors. Arroz Con Pollo (rice with chicken) is
one of her favorites. Many countries—from Spain to Latin America—claim this dish, so there are many different
ways to prepare it. This particular recipe is served up Valley style and is uniquely Texan.

The Book of General Ignorance but admit that it was, uh, intellectually
taxing, and for anyone looking for a smart novelty book, The Hungoevr
[sic] Cookbook does for the hangover what Eats, Shoots and Leaves did
for punctuation.
Everything you need to know to assess, understand, and improve a
hangover is here: dozens of comforting recipes, very clever graphic tests
for analyzing your state of mind, and quizzes for tracking your progress.
A good hangover brings its victim to a new state of mind—and one that,
when looked at objectively, can be quite fascinating to its host: it can
create an increased awareness of the body, a willingness to eat something
usually off-limits, and a fascination with the mind’s strange acrobatics.
With P. G. Wodehouse’s six hangovers (The Broken Compass, The Sewing
Machine, The Comet, The Atomic, The Cement Mixer, and The Gremlin
Boogie) as a starting point, recipes are tailored to each specific malady,
allowing the reader to find a recipe (or just a menu item) that precisely
suits his state of mind—and body. Interspersed with the recipes are mind
games, witticisms, and graphic jokes, insights into hangover science, quiz-
zes to see if you are still drunk or now just merely hungover, and more.

On Becoming a Chef at the Culinary
Institute of America
Jonathan Dixon
For fans of Top Chef and Iron Chef America as well as Michelin
star–obsessed foodies who dream of becoming a professional chef,
Beaten, Seared, and Sauced pulls back the curtain on America’s most
revered cooking school and shares what it’s really like to complete
the intense degree program at the Culinary Institute of America.
Millions of Americans fantasize about leaving their dead-end jobs,

and Sauced goes behind the scenes to give readers the firsthand
experience of being a full-time student facing all of the challenges of
the legendary course.

Peter Callahan with Raquel Pelzel

For home cooks who love to throw parties, large or small,
caterers looking for inspiration, and those who want to be
voyeurs into the glamorous world of star-studded parties,
Peter Callahan, one of the most innovative caterers of our
time, presents a cookbook that showcases the whimsical
high style of his unique savory and sweet small bites.
Peter invented high-end party food as we know it and now, he
shares his secrets. In Bite by Bite, Peter invites readers to enter
his world of whimsy and wit, where tuna tartare becomes an ice
cream cone, shrimp cocktail becomes lollipops, and frites are
served next to mini sliders. In Peter’s world, cotton candy has left
the carnival and arrives in miniature on Park Avenue, and comfort
food is dwarfed to perfection with Lilliputian versions of grilled
cheese, cheeseburgers, and spaghetti and meatballs.
There are 100 recipes, all accompanied by vibrant food
photography, ranging from savory to sweet and comfort food
to haute cuisine, and variations, tips, and shortcuts to make and
present food and drink. In his debut cookbook, Peter simplifies

The rise, fall, and rediscovery
of a great American grape
A rich romp through untold American history, this is the tale of a little-known
American grape and the fascinating cast of characters who have devoted their lives to
bringing it to greatness.

Fans of the eccentric characters and wine lore that

inhabit The Billionaire’s Vinegar will find much to love
in The Wild Vine, a literary exploration of two entwined myster-
ies: an obscure grape that rose to prominence, only
to disappear, and its biggest present-day champion,
dot-com-millionaire-turned-vintner Jenni McCloud.
Created in the mid-1800s by a suicidal doctor in Virginia
who subscribed to Jefferson’s belief that America would
one day produce a native grape suitable for winemaking,
the Norton grape produced a wine that was praised at a
competition in Vienna later that century—long before
California wines, made from European varieties, rose to
international distinction. After the grape’s brief soar to
fame, it dissolved just as quickly into oblivion but was kept
alive by bootleggers during Prohibition. Now, generations
later, the irrepressible and enigmatic McCloud and others
are reviving America’s underdog grape, our country’s
homegrown answer to Chardonnay and Merlot.

Praise for The Wild Vine

“You don’t need to be a wine insider to enjoy this
fascinating tale of outsiders.” —Oxford American

Desperate Cupcakes
By Anita Dyette
Sure, cupcakes are sweet when they’re all dolled up for birthday
parties, but what happens when the wrapper comes off? This
deliciously funny book gives you a behind-the-scenes look at the

gift book
wild and tawdry lives of desperate cupcakes. You’ll meet inse-
cure cupcakes like Sally, who wraps herself in bacon to bring the
sizzle back into her relationship. Follow the cupcakes to the dark
side as they experience sugar rushes and crashes, succumb to
snack attacks, and engage in ill-advised activities (like riding with
the Hells Angel Cakes).
