SERVICES REQUIRED (Supplied by Others) The installation of all services to and from the oven are the responsibility of the customer and should be done only by qualified personnel.

Natural Gas: Water: Drain:

170,000 BTU pipe %" NPT connection to gas valve. Gas line to terminate with shutoff valve and drip pocket. %" Hot or Cold filtered water with shutoff. %" drain connection. INSTAllATION
UNPACKING Immediately after unpacking the oven, check for possible shipping damage. If this oven is found to be damaged, save the packaging material and contact the carrier within 15 days of delivery. Prior to installation, verify that the electrical service and type of gas (natural or propane) agree with the specifications on the oven data plate which is located inside the left control door. lOCATION The oven must be installed on a lEVEL cement floor (non-combustible) capable of carrying the weight of the oven plus the weight of the heaviest rack of product to be baked by the oven. (Check with your architect or local building inspector.) The equipment area must be kept free and clear of combustibles. Clearances from combustible or noncombustible construction are 0" from the back or sides. The installation location must allow adequate clearances for servicing and proper operation. The oven must be installed so that the flow of combustion and ventilation air will not be obstructed. Adequate clearance for air openings into the combustion chamber must be provided. Make sure there is an adequate supply of air in the room to allow for that required for combustion of gas at the oven burners.

INSTALLING THE OVEN After removing the oven from the shipping skid and removing the protective wrapping from the back and both sides, carefully place the oven in its final position. Make sure the floor area has been properly cleaned. To properly seal the oven to the floor, use a prybar and carefully lift the oven slightly, starting with the left side. Lay a bead of NSF-approved caulk (supplied) on the floor approximately %" in from the edge of the oven. Carefully remove the prybar, making sure the oven does not move in the process. Repeat the same process on all other sides of the oven. INSTALLING THE CANOPY 1. With the control panel door closed, remove the shipping hinge from the top left side of the door. Save the pin and stainless steel sleeve for reuse later. 2. With assistance, locate the canopy to its correct position, and fit the (4) chrome acorn nuts to the studs provided to secure the canopy to the front of the oven. 3. Using the shipping hinge pin and the stainless steel sleeve saved in Item 1, insert the pin through the canopy, then through the sleeve into the hole provided in the top left side of the control panel door. 4. Secure canopy across the top of the oven with sheet metal screws provided. INSTALLING THE CANOPY I STEAM EXHAUST FAN Install the canopy/steam exhaust fan to the holes provided on the top side of the oven hood on the roof of the oven. Due to the hole pattern of the mounting bolts, the fan assembly can be mounted in more than one position. Make sure the position you finally choose is correct for any duct work connecting to the fan and for the electrical cable, making sure it can be properly connected to the junction box of the fan motor. 1. Locate the fan assembly to the holes provided, passing mounting studs through the holes in the roof of the oven. 2. Using the M8 Brass or stainless steel nuts provided, fasten the fan assembly to the roof of the oven. This is done through the damper exhaust port. Pull the damper rod all the way out to its full open position; this will allow you to pass your hand through the hole to fit the nuts to the studs. WARNING: DISCONNECT ELECTRICAL POWER SUPPLY AND PLACE A TAG AT THE DISCONNECT SWITCH TO INDICATE THAT YOU ARE WORKING ON THE CIRCUIT. 3. Connect the 3-phase electrical power supply to the fan motor. Remove the cover on the junction box of the fan motor. Pass the wires through the strain relief connector fitted to the fan motor junction box body. 4. Tighten the flexible conduit into the strain relief connector.

5. See motor junction box cover for correct connection information for 208/220V. 6. Tighten each of the 3-phase wires (black) into the terminal strip in the fan motor junction box. (If the wires are too long, it may be necessary to cut them. Make sure any wire markers are reinstalled on remaining wire. 7. Connect the green (ground) wire to the ground terminal of the fan motor junction box. 8. Before reinstalling the exhaust fan junction box cover, make sure all electrical connections are tight. INSTALLING THE DOOR RAMP 1. Fully close the baking chamber door. 2. Locate the door ramp to its correct position. Make sure that the (4) countersunk holes line up properly with the (4) threaded holes in the floor plate. 3. Fasten the ramp to the oven floor, using the (4) alien head countersunk screws provided. Make sure they are all seated properly. 4. Open and close the baking chamber door several times to make sure that it does not catch on any of the ramp screws. ELECTRICAL CONNECTIONS WARNING: ELECTRICAL AND GROUNDING CONNECTIONS MUST COMPLY WITH THE APPLICABLE PORTIONS OF THE NATIONAL ELECTRICAL CODE AND/OR OTHER LOCAL ELECTRICAL CODES. WARNING: DISCONNECT ELECTRICAL POWER SUPPLY AND PLACE A TAG AT THE DISCONNECT SWITCH TO INDICATE THAT YOU ARE WORKING ON THE CIRCUIT. Incoming power is brought into the main electrical panel at the top right side (knockout provided). Connections are made to the main terminal block at the top right side of the panel. They are marked R S T for the three phases, N for neutral and green and yellow for ground. Connect Oven Wiring to the Burner P250 1. Remove the cover from the electrical junction box at the top of the burner. Pass the (5) wires through the 112" knockout and secure the seal-tight connector to the junction box. Secure the ground wire to the ground terminal provided at the back left side of the junction box. 2. Connect Wire #B1 from oven to black pigtail wire from burner. 3. Connect Wire #B2 from oven to white pigtail wire from burner. 4. Remove external jumper from T.T. on burner junction box. ~\ JI

5. Connect Wire #17 for oven to internal wire connection from T. Use wire nuts provided.

6. Connect Wire #16 from oven to internal wire connection from T. Use wire nuts provided. 7. Check all connections to make sure they are tight. Replace junction box cover. Interconnecting Wiring for Draft Induction Fan with Air Proving

After completing installation of the draft fan assembly into the chimney, it is the responsibility of the licensed electrical contractor to make all the electrical interconnections between the draft fan and air proving switch to the oven.

A. Draft Induction Fan: 110 Volt, 1 phase, 60 Hz, 5.8 Amp


Run (3) wires from terminals W5, N5 and ground through the knockout provided in the bottom of the main electrical panel to the draft induction fan motor. At the fan motor, remove the junction box cover and install a device connector through the W' knockout provided. Connect wires to Terminals 1 and 6 as indicated on the motor data plate. Connect ground wire to the ground lug provided. After making sure all connections are tight, reinstall junction box cover.

B. Air Proving Switch


Run (3) wires from Terminals 20,21 and ground through the knockout provided in the bottom of the main electrical panel to the air proving switch. Remove junction box cover and install device connector through %" knockout provided. Connect Wire #20 to terminal marked "common" and Wire #21 to terminal marked "normally open." Connect ground wire to the ground lug provided. After making sure all connections are tight, reinstall junction box cover.

GAS CONNECTIONS Gas supply connections and pipe joint compound must be suitable for sealing piping for propane or natural gases. The burner will come from the factory with the correct orifices (natural gas: "C" .242, and propane gas: #26 .147), 170,000 BTU main gas valve preset at 3W' W.C. (Water Column), the primary air intake must be set at %", the flame spreader must be set at 10/,6",and the mounting flange cropped and set to fit the oven. Make sure you properly trim and fit the gasket supplied and tighten properly. Using the (4) M8 brass nuts and washers provided, mount the burner to the wall of the oven.

WARNING: PRIOR TO LIGHTING, CHECK ALL JOINTS IN THE GAS SUPPLY LINE FOR LEAKS. USE SOAP AND WATER SOLUTION. DO NOT USE AN OPEN FLAME. After piping has been checked for leaks, all piping receiving gas should be fully purged to remove air.

TESTING THE GAS SUPPLY SYSTEM

When test pressures exceed % psig (3.45 kPa), the oven and its individual shutoff valve must be disconnected from the gas supply piping system. When test pressures are % psig (3.45 kpa) or less, the oven must be isolated from the gas supply system by closing its individual manual shutoff valve. PLUMBING CONNECTIONS WARNING: PLUMBING CONNECTIONS MUST COMPLY WITH APPLICABLE SANITARY, SAFETY AND PLUMBING CODES. Connect the water supply line to the %" input. Install a manual shutoff valve. Water Quality The fact that a water supply is potable is no guarantee that it is suitable for steam generation. Your water supply must be within these general guidelines:

Other factors affecting steam generation are iron content, amount of chloridation and dissolved gases. Water supplies vary from state to state and from locations within a state. Therefore, it is necessary that the local water treatment specialist be consulted before the installation of any steam generating equipment. APPLIANCE FAILURE CAUSED BY INADEQUATE WATER QUALITY IS NOT COVERED UNDER WARRANTY.

Drain Connections
CAUTION: The floor drain must be external to the cavity of the main control panel. No steam must be allowed to circulate in the main control panel cavity as it will cause premature failure of both electrical and mechanical components. In order to avoid any back pressure in the steamer, do not connect solidly to any drain connection. WATER SOLENOID I STRAINER ASSEMBLY 1. Wrap the %" NPT water line stub connection at rear top of the oven with Teflon tape.
2. Install pressure regulator and pressure gauge to water inlet. 3. Screw the solenoid/strainer assembly to the water line stub connection. DRAFT INDUCTION FANS AND AIR PROVING SWITCH KIT 1. Apply gasket material (supplied) to the mounting side of the flange of the draft fan assembly. Mount air proving switch to the draft fan motor base using bracket provided.

2. Locate and remove %" knockout seal from fan housing. Install %" compression fitting into fan housing, securing with hex head nut supplied.

3. Install Va"compression fitting into upper port of air proving switch. 4. Cut and install Va"aluminum tubing between compression fittings on fittings on fan housing and the air proving switch. Cut tubing long enough to allow for a single expansion loop. 5. Give completed assembly to the venting contractor for installation into the chimney. Wherever possible, this draft fan assembly should be mounted no higher than 6' from the roof of the oven to allow for proper serviceability. Only Type "B" vent must be used beyond the draft fan assembly. FLUE CONNECTIONS Do not obstruct the flow of flue gases from the flue duct located on the rear of the oven. It is recommended that the flue gases be ventilated to the outside of the building through a ventilation system installed by qualified personnel. From the termination of the oven flue vent to the filters of the hood venting system, an 18" minimum clearance must be maintained. Information on the construction and installation of ventilating hoods may be obtained from the standard for "Vapor Removal from Cooking Equipment," NFPA No. 96 (latest edition), available from the National Fire Protection Association, Batterymarch Park, Quincy, MA 02269. START-UP PROCEDURE Model CRO-1G Make sure the manual gas valve on the incoming gas line is OFF. Testing of the gas burner will be covered later in this start-up procedure. 1. With the main disconnect of the oven in the OFF position and the front cover of the panel removed, check for the proper incoming voltage at Terminals R.S.T. and N. 208/220 Volt, 3 phase, 60 Hz across R.S.T. 110 Volt, 1 phase, 60 Hz across Rand N. 2. Make sure the oven is properly grounded. Replace the covers of the main control panel and leave the main switch in the "0" OFF position. 3. Before turning the power to the oven on, check the position of the rack lifting device to see if it is in the down position. If it is not, refer to the service manual for procedure to correct. Up position - 1%" between lifting device and inside roof Down position - 2%" between lifting device and inside roof In the down position, the rack lift will properly receive a rack. Make sure all racks properly fit into the oven before going any further with the start-up procedure. MAKE SURE THAT ALL SWITCHES, TIMERS AND THE THERMOSTAT ON THE OPERATOR CONTROL. PANEL ARE IN THE OFF POSITION.

4. Turn main power to the oven ON. 5. The phasing of the 3 phase supply is extremely important. The oven must be started for the first time following this procedure: a. Open oven baking chamber door. . b. Turn main switch 1C on main control panel to "1" ON position (right). c. Turn main operator switch 1SW to "VENTILATION" position (left).

At this time, the main blower fan and the oven lights will come on.
d. Switch oven OFF after about 30 seconds and check the rotation of the blower fan. There is a directional arrow mounted on top of the fan motor. Make sure the motor cooling fan is running the same way as the arrow is indicating (clockwise). If the rotation is incorrect, DISCONNECT ELECTRICAL POWER SUPPLY and interchange any two of the incoming power supply leads. Verify correct rotation. When correct rotation has been achieved, all other 3 phase motors except the steam exhaust fan will be phased correctly. e. Close the baking chamber door. f. Turn electrical power supply ON. Turn main operator switch to the baking position. The oven lights will come on and the rack lift will start to rise.

If rack lift goes down instead of up, return the main operator switch to center "OFF" position immediately, and contact an electrical contractor to reverse the phasing of the incoming power to the rack lift motor.

WARNING: DISCONNECT ELECTRICAL POWER SUPPLY AND PLACE A TAG AT THE DISCONNECT SWITCH TO INDICATETHATYOU ARE WORKING ON THE CIRCUIT.
After the rack lift is in its UP position, the main blower fan will start and will continue to run as long as the door remains closed.

At this time, the rack WILL NOT ROTATE.


g. Turn the bake timer to about 2 minutes; now the rack lift will rotate. After the timer has timed out, the alarm will buzz. The alarm will continue to sound and rack lift will continue to rotate until you turn the baker timer (left) to the OFF position. h. With the baker timer now in the OFF position, the alarm will stop and the rack lift will continue to rotate until it comes around to its correct load/unload position, then it will stop. The rack lift will stay in the UP position and the oven will continue to operate until the bake chamber door is opened. i. Open the bake chamber door; the main blower fan will stop and the rack lift will come DOWN. At the same time, the steam exhaust fan will start.

With the bake chamber door open, the purge timer 5-TR will be activated.

If the oven is left on with the bake chamber door open for a period of time greater than that set on timer 5-TR, the stack fan will switch off and, through the air proving switch, the burner will also be switched off; however, the steam exhaust fan will continue to run. When the bake chamber door is closed again, timer 5-TR will reset. The stack fan and burner will start to run, and the steam exhaust fan will stop. j. Make sure the manual valve (tap) on the incoming water line is closed. With the bake chamber door open, set bake timer 1-TR for 2 minutes and steam timer 2-TR for 20 seconds. Close the bake chamber door; the rack lift will go UP. When the rack lift is in the UP position, the rack lift will rotate and the water solenoid will open simultaneously. During the steaming cycle, the main blower fan and the burner will stay OFF. Upon completion of the steam cycle, the main blower and burner will come back ON. (The burner will come on only if the thermostat is calling for heat.) The oven is now in its normal baking cycle and will continue to run until the bake timer 1-TR times out. Refer to paragraphs g, h, and i for sequence of events. You have now completed a dry run of the oven without gas or water. All electrical and mechanical functions should be operating correctly. GAS BURNER START-UP IMPORTANT: During the initial heating of the compact rack oven, it will give off a considerable amount of smoke. This is due to the burning off of oils and the baking of painted surfaces. Please make sure that the area where you are working is well ventilated and that the customer is forewarned so they can provide adequate ventilation. After you have checked all the settings on the gas burner, as described in GAS CONNECTIONS250AF-EP Burner Adjustments, and the system has been leak checked, turn ON the manual gas valve. Follow the "Starting the Burner" procedure described by the burner manufacturer in their specifications for Model P-250 Gas Burner (pages 8 & 9),

AND/OR
in accordance with your Hobart service manual for the compact rack oven. Before the burner will operate, the bake chamber door must be closed with the handle in the DOWN position and the main switch 1SW in the BAKING position. Upon completion of all tests, and when you are satisfied that the burner is working properly and firing at 170,000 BTU, close the damper and set the thermostat at 400F. The oven should come up to temperature in approximately 14 minutes from ambient. Allow the oven to cycle in temperature for about % hour at 400F. During this time, use your test thermometer to make sure the temperature indicated on the thermostat is the same as that in the center of the bake chamber. If the thermostat requires calibration, refer to your service manual for calibration instructions.
