Cream Pie

Cup Sugar Cup Flour tsp Salt 2 Eggs, beaten 2 Cups Milk, scalded tsp Vanilla 2 Tbsp Butter

Combine butter, sugar, salt, flour, and eggs. Add milk slowly, stirring constantly. Cooke over hot water until thick and smooth. Add vanilla. Pour into baked pastry shell. Cool. Serve with whipped cream. Optional: Cover with meringue. Bake in slow oven (325) 20 minutes.

Banana Cream Pie


Prepare filling for cream pie. Cool. Cover bottom of baked pastry shell with thinly sliced bananas. Cover with cream filling. Cool. Serve with whipped cream.

Chocolate Cream Pie

1 Cup Evaporated Milk 1 Cup Water 2 Eggs, beaten Cup Sugar

4 Tbsp Flour tsp Salt 1 tsp Vanilla

1 Square Chocolate or 3 Tbsp Cocoa + 1 Tbsp Shortening

Melt chocolate (or shortening and Cocoa) over hot water. Add flour, 6 Tablespons sugar, and salt. Combine milk and water. Add slowly, stirring

constantly, to chocolate mixture. Cook over hot water until thick and smooth. Add egg yoks. Cook 5 minutes, stirring contantly. Cool. Add vanilla. Pour into baked pastry shell. Cover with meringue made of the egg whites and 2 Tableshpoons sugar. Bake in slow oven (325) 20 minutes.

In order to publish a recipe book that would meet the needs of the homemake, one thousand questionnaires were sent to readers of Household who were known to be especially interested in food preparation. The final plan is in keeping with the majority of the suggestions received. This book is seigned to be helpful to young as well as experienced homemakers. Each recipe was contributed by a read of Household developed by the magazine's food specialists, or submitted by a manufacturere whose food prodcuts had been entered for study. Likewise each recipe was tested for accuracy, dependability, palatability, and balance of readily obtainable and economical ingredients. The testing was done by The Household Searchlight, which from 1925 to 1942 was maintained for the study of home products under actual home conidtions. The exigencies of the war necessitated closing The Searchlight in April, 1942. Testing of foods is now carried on in Household's Kitchen, and all future additions to this recipe book and all recipes appearing in Household will carry the approval of Household's Kitchen, where they will haven been thoroughly tried out. In war or peace homemakers may rely implicitly on every recipe published under the auspices of Household. There are no time and temperature tables in this book. The time of cookery and the temperature required are given with each recipe. Where it is possible the number of servings is given. Commercially canned, packaged, and bottled products may be substituted in any of the recipes. The Household Searchlight worked out the recipes with the substitutions and found them satisfactory.
