Introduction: Freezing and cold storage are among the oldest methods of food preservation and in frigid climates foods, naturally frozen, were thawed and consumed by prehistoric man. In more recent times, such as the later half of the nineteenth century, some fish, meat, and poultry were being frozen and commercially sold in the United States and many other countries. These were frozen out of doors in winter months and shipped short distances in iced wagons. Now, the most significant wide use of ice is for preservation and handling of various food products viz. vegetable, meat and fish. The process of food preservation using ice has number of advantages over other conventional methods such as salting (on the case offish and meat) dryingand by means of chemicals. The purpose of freezing and keeping in ice meat and fish, either fresh or processed, is to obtain commodity that can be stored for some months and will then give a thawed product that has been changed hardly at all by the processes. Handling of food should ensure that it retains its initial freshness, so far as is possible until in the stage of consumption. Therefore, the use of ice for freezing and handling of fish and meat has potential advantages over the other traditional methods of preservation such as salting, smoking and drying. Besides the above use, ice is used in various other fields. In summer season, cold drinks are prepared either adding ice into the beverages or by keeping bottles of drinks in ice boxes. Certain chemical reactions are favoured in the presence of ice and hence a considerable quantity of ice is used for this purpose. In India, considering the increasing consumption of ice, this industiy is in progress. There are two types of ice plants, tube ice plant and block ice plant. Among these, the most popular in India is block ice plant in which ice is made as large blocks weighing 100 - 300 kgs. Ice plant require very low working capital and is highly profitable one. Properties: There is no particular specification or standard for ice blocks manufactured in a plant. The quality of ice depends on the water used for it. The water for ice should be free of any contaminants and pH should be in the range of 6.50 and 7.50. No particular specification for size and weight of the ice block is specified. Uses & Applications: (1) Food preservation and transfer of frozen food products, especially fish and meat, are the main area of application of ice. (2) Its industrial application is also very important. Dye indus-cry is the main consumers of ice because certain dye formation reactions can be favoured only by the addition of ice pieces, during diazotization process. (3) Cold drinks are prepared by the shopkeepers by adding ice into fruit juices or by putting the soft drink bottles in the box filled with ice. Ice is used for making cold water for many other purposes. Hospitals are using a considerable amount of ice blocks for various uses. Market Survey: As in the case of other industrial products, the market of ice blocks is also directly proportional to the growth of various fields where it is consumed. Consumption of ice is mainly for food preservation, especially for fish and meat freezing, and transportation from one place to another. Proper icing from the initial stage of preparation from sea in the case of fish ensures initial freshness until it is being consumed. As the use of ice is increased for food preservation, the traditional methods of preservation are used in very limited cases. New methods of preservation with ice and suitable equipments and vessels have made this preservation operation much popular and made it easy to transfer any type of food product, that can be spoiled within a limited time, if ice is not used to any distant place. Frozen food can be stored for months in special ice boxes and hence now it is possible for any person who is dwelling in any corner of the globe, to consume such food products. Therefore the consumption of such preserved products is increasing rapidly which increases the consumption of ice. Besides this ever increasing market potential, the fast growing consumption of cold drinks and industrial significants of ice make the future market very bright. Materials Required for Refrigeration Operation (i) Compression oil (ii) Liquid ammonia (as refrigerant) Pure Water is the only raw material used by this industry. Plant & Machinery (1) Heavy duty double cylinder reciprocating compressor. (2) Discharge line oil separator to remove entrained oil vapours from the discharge gas. (3) Ammonia condenser complete with all accessories automatic control. (4) Liquid Ammonia receiver with valves, liquid level gauge and floor supports. (5) Freezing tanks. (6) Refrigeration coils with self temperature controller. (7) Brine Agitator (8) Air blower (9) Ice cans, welded construction on heavy gauge sheet steel. (10) Crane and Hoist for removing cans from the freezing tank. (11) Evaporator coils. (12) Non-condensable gas purger and FP drop tube. (13) Pumps and Motors. (14) Pipes and Fitting. (15) Miscellaneous equipments. Manufacturing Process: Thermodynamic principles govern the refrigeration and ice making process. Compressor, condenser, etc. are the main equipments used for this industry. Compression fluid (refrigerant) is liquid ammonia. Block ice is made in galvanized cans of various sizes, which are lowered into a steel tank filled with brine. The water taken in the cans should be free from impurities if it is used for edible purposes. The freezing tank is filled half with saline water. Ice cans filled with water are placed in the freezing tank where ammonia is circulated through coils. The coil cools the Saline water and cold saline water in turn to the ice can water. When liquid ammonia enters in the expansion coil it readily starts evaporating. The evaporated ammonia is sucked and compressed by the compressor which raises the pressures of the refrigerant vapour so that its saturation temperature is slightly above the temperature of the available cooling medium. The liquid ammonia enters into the expansion coil and continues the cycle. If dissolved air also freezes along with the water in the cans, the block will be opaque or white in colour. Clear ice blocks are produced by forcing an air stream through the water in the cans by means of a tube hanging inside the can. Continuous air agitation results in the concentration of impurities in the centre of the ice block. They are pumped out and replaced with fresh water. After sufficient time, the ice blocks are taken out of the cans.
