What kind of customer do they intend to serve?

Brindavan is serving food mostly for high class


people

Sanskruti hotel serves food to all class of people


Do they serve you while you are standing or do
they first sit you?

Both Brindavan and Sanskruti first give seat to


their customer and then collects order.
How big is there seating capacity?

Seating capacity in Brindavan is about 100 people

Seating capacity in Sanskruti is about 80 people


How do they take order?
 What is the process of communicating
your order other working in the outlet?

In Brindavan and Sanskruti order is being taken, it is


passed in kitchen and food is cooked and then being
served to the customer.
Are the items prepared after taking order or
they are already prepared?

In both the restaurant food is already prepared and


half is only prepared when the order is being placed
like chapati, grave of sabji,etc..

But if u order something special, it is prepared at


that time only.
Do they allow customization in order?

Yes in both restaurant customization is


allowed even after placing the order.
 Do they take large order for party?

 Both restaurant take large order for party


and also take order for marriage function
What part of their processes are visible to you?

 In Brindavan, kitchen through window is visible for


some parts only

 In Sanskruti no process is visible


 How do they handle any quality issue a
which might prop up?

If quality issues occurs then whole product is


being replaced in both restaurants
Are employees doing skilled work? What kind of
job allocation is visible?

Job allocation

 All employee in both restaurant do skilled work.

Different employee for serving water,


serving food and taking utensils. Supervisor
is moving around for any problem.
What is the extent of automation? What work
done manually?

 In both billing is done through billing machine.


In Brindavan there are machines for boiler, grinding
machine dish washer machine, etc…
But no automation in Sanskruti restaurant
 What is the process of clearing the table?

Table is cleared when dinner is finished,


they also ask for any desert and then billing is done
in both restaurant.
 What could be motivation behind designing
such a process?

 High profits, customer satisfaction and good


quality food is only the motivation
 To compete with some international restaurant
like Hotel Shiv international 3 star
